Classic Cherries Jubilee

Delicious & easy to make. I didn't have any cherry extract on hand, so I followed a previous reviewer's advice & substituted with almond extract. Unfortunately we lit the pan outside, and couldn't see the blue flame because it was too bright out. We could hear the flame interestingly enough & feel the heat, so we knew it worked. My advice would be to light the flame in a darker setting so you can enjoy the display. We'll do this one again.

Cassata Cake

This was a fantastic cake. Every year I purchase a cassata cake from a local italian bakery for my dad for father's day. This year I decided to give it a try on my own. He absolutely loved it. I did make a few substitutions based on the cassata cakes that we have enjoyed in the past. I substituted mini chocolate chips instead of the grated chocolate & I omitted the candied lemon peel. I also left off the chocolate glaze (I have never seen this on a cassata cake) and instead substituted a whipped cream frosting, also from this website. I also used a vanilla flavored light rum for the filling. My entire family loved this one, I'll definitely make it again.

Silver's Savory Chicken and Broccoli Casserole

I really enjoyed this recipe and it was easy to make. After reading some of the other reviews, I decided to try & spice it up a bit and avoid using as many pans. After cooking & removing the chicken from the pan, I sauteed the onions in the same skillet and also added a couple of cloves of chopped garlic. When I added the chicken broth, I scraped up the brown bits left from the chicken in the bottom of the pan. I also added a few hearty dashes of cayenne & cumin to the sauce. I didn't have any provolone cheese on hand, so I substituted some mozzarella & swiss to go along with the cheddar. I also used fresh broccoli instead of frozen. I ended up with a great dish that I'll most likely try again. I think that there is an endless possibility of variations that can be made to this dish, depending on what you have on hand. Thanks for the recipe.

Slow-Simmered Chicken Rice Soup

Made this for a family get together & everyone loved it, even the kids. I didn't have time to slow cook, so I simmered on the stove. I took the advice of previous reviews & waited to throw in the rice until the last hour. Even with that, I still needed to add about 3 additional cups of stock towards the end of cooking as the rice soaks it all up. As a personal preference, I added 3 sliced carrots & 3 cloves of minced garlic. Loved the subtle kick the red pepper flakes added.

Peanut Butter and Chocolate Cake II

I made this cake for my husband's birthday & it was a hit. He is a huge peanut butter & chocolate fan & difficult to please, but received rave reviews. I'll make this one again. Thanks for sharing the recipe.

Chinese Firecrackers

These were amazing. So much flavor in a small bite. I was short on time, so instead of making the "firecrackers" out of phyllo dough sheets, I brought the pre-formed frozen phyllo shells. I stuffed the filling into the shells & heated them up.

Deep Fried Jalapeno Slices

These were awesome!! Hubby was eating them faster than I could make them. Word to the weak - they are spicy! We served with salsa con queso dip. I used the leftover batter & fried up some green beans & broccoli. Delicious!! Because we cooked them after the jalapenos, the oil picked up a spicy flavor that carried over to the other veggies. Not sure why other reviewers were saying this was too runny of a batter, I thought it was perfect as is.

Hot Pepper Jelly

This was delicious. We used it as a topping for Chicken Flautas (also from this website). I modified the pepper ratios to suit our spicier taste. I used about 3 cups of jalapenos and 1 each of red & green bell peppers. Even after this modification, it was still sweet, I think I could have upped the jalapenos even further. I used 4 tbs pectin, and that was a very thick jelly. I think next time I will reduce to 3 tbs. I also used the inversion method to set.

EAGLE BRAND® Quick Chocolate Mousse

The whole family loved this, and the teenager ate up all the leftovers quickly. I tried to lighten it up a little by using fat free condensed milk & sugar free pudding mix. You wouldn't even noticed the reduced calories, it was delicious!

Quiche Supreme

I substituted red pepper for green (and I used a whole pepper insteaf of just 1 tbs). I also used fresh mushrooms instead of canned. Made this for Thanksgiving bruch & it was a hit! Great recipe.

Strawberry Cupcakes

Made as written, but used a lot more strawberries (almost a full cup) per previous reviews. It is a bit heavy for a cupcake consistency, but still so tasty. I paired it up with the vanilla powdered sugar fronsting recipe (also from this site). I brought to my monthly cooking club & it was a hit!

Slow-Cooker Chicken Tortilla Soup

Good recipe, I always appreciate new slow cooker options for my hectic work schedule. I threw the chicken breasts in frozen & let them simmer all day on low, and shredded the chicken right before serving. So tender, it just fell apart.

Taco Seasoning I

This was a lifesaver! I was in the middle of making tacos for dinner & had all the fixins except for taco seasoning. I grabbed the computer & whipped up this recipe. Fortunately I had all the ingredients on hand. I added the entire mix to about 1 1/2 lbs of ground beef with 2/3 cup of water. Delicious! No more packet mixes for me.

Eggs Benedict

Really tasty, I love poached eggs & have never attempted to make benedict before. I followed the advice of previous reviewers & cut way back on the lemon juice (used 1/2 tsp for a single serving). Here's the trick, measure out all the ingredients for the sauce & set them aside, start the water for the double boiler to warm it up. Cook the muffin, canadian bacon & poached eggs first. Have them ready to serve, then start the sauce at the very end - it only takes a minute or two if you have everything ready. Serve immediately!

Stuffed Strawberries

This was a really cute clever dish. I substituted orange extract for the liqueur beause it was all I had on hand. I think I would have preferred a different flavor other than the orange. Maybe vanilla next time?

World's Best Lasagna

My family LOVED this recipe, and it was even better 2 days later as leftovers. The only change that I made was to replace the water with extra tomato sauce. Instead of cooking the noodles ahead of time, I just soaked them in hot tap water for about 10 min. They were still very firm when I put them in the casserole dish & they came out perfect. The lasagna held it's shape and was easy to serve. This will be a weekend staple in our rotation as it does take some time to prepare. Thanks for a great recipe.

Super-Delicious Zuppa Toscana

I am just learning to embrace soup making, and this was a great one. I used spicy chicken sausage, and kale instead of spinach. I also used half & half instead of cream because it was what I had on hand. I also cubed the potatoes and used about 8 of them. Delicious!

Banana Berry Smoothie II

Yum! I used about 6 frozen strawberries, and about 3 tbs of yogurt & 1 tbs of honey. Very creamy & delicious. The best part was that I had all the ingredients on hand, so I didn't need to run to the store for a thing.

Baked Potato Soup

We LOVED this soup, it was so flavorful. My husband doesn't usually like it when I make soup for dinner, because it doesn't feel it's enough to keep him satisifed. But he raved about this soup paired with a simple ham sandwich. I doubled all of the ingredients, except for the basil. I also added about 1/3 cup sour cream because I had it one hand and I thought it would add to the "baked potato" flavor. I let everything simmer at the end for close to an hour and it really let the flavors meld together nicely. I thought it looked a little on the thin side, so I mixed a couple tbs of cornstarch into a little half & half and stirred that in to the soup. I think next time I will make extra potatoes and puree some of them into the broth to thicken it even more.

Easy Lemon Cookies

Really quick & easy. Hubby loved them, and my cooking club too. Update: Since the original lemon recipe turned out so well, I've experimented with a couple others as well. Chocolate cake mix with mint extract is also devine, and I recently tried strawberry cake mix with strawberry extract. Delicious. This is a wonderfully easy, versitile recipe.
