Quiche Supreme

I substituted red pepper for green (and I used a whole pepper insteaf of just 1 tbs). I also used fresh mushrooms instead of canned. Made this for Thanksgiving bruch & it was a hit! Great recipe.

The Best Meatballs

I made a couple of changes here. For the meat I used 1 lb ground beef & 1 lb ground mild pork sausage. Also, instead of frying them, I placed under the broiler & rotated them a couple of times until they were evenly brown. I finished cooking them in my sauce & served with the "Worlds Best Lasagna" also from this site. Delicious!

World's Best Lasagna

My family LOVED this recipe, and it was even better 2 days later as leftovers. The only change that I made was to replace the water with extra tomato sauce. Instead of cooking the noodles ahead of time, I just soaked them in hot tap water for about 10 min. They were still very firm when I put them in the casserole dish & they came out perfect. The lasagna held it's shape and was easy to serve. This will be a weekend staple in our rotation as it does take some time to prepare. Thanks for a great recipe.

Slow-Cooker Chicken Tortilla Soup

Good recipe, I always appreciate new slow cooker options for my hectic work schedule. I threw the chicken breasts in frozen & let them simmer all day on low, and shredded the chicken right before serving. So tender, it just fell apart.

Super-Delicious Zuppa Toscana

I am just learning to embrace soup making, and this was a great one. I used spicy chicken sausage, and kale instead of spinach. I also used half & half instead of cream because it was what I had on hand. I also cubed the potatoes and used about 8 of them. Delicious!

Banana Berry Smoothie II

Yum! I used about 6 frozen strawberries, and about 3 tbs of yogurt & 1 tbs of honey. Very creamy & delicious. The best part was that I had all the ingredients on hand, so I didn't need to run to the store for a thing.

Chicken Marsala

Really good recipe! I followed directions exactly, except doubled the mushrooms. Paired it with a side of rice pilaf & fresh asparagus and it was a huge hit. Simple enough for a weeknight, and still delicious.

Baked Potato Soup

We LOVED this soup, it was so flavorful. My husband doesn't usually like it when I make soup for dinner, because it doesn't feel it's enough to keep him satisifed. But he raved about this soup paired with a simple ham sandwich. I doubled all of the ingredients, except for the basil. I also added about 1/3 cup sour cream because I had it one hand and I thought it would add to the "baked potato" flavor. I let everything simmer at the end for close to an hour and it really let the flavors meld together nicely. I thought it looked a little on the thin side, so I mixed a couple tbs of cornstarch into a little half & half and stirred that in to the soup. I think next time I will make extra potatoes and puree some of them into the broth to thicken it even more.

Deep Fried Jalapeno Slices

These were awesome!! Hubby was eating them faster than I could make them. Word to the weak - they are spicy! We served with salsa con queso dip. I used the leftover batter & fried up some green beans & broccoli. Delicious!! Because we cooked them after the jalapenos, the oil picked up a spicy flavor that carried over to the other veggies. Not sure why other reviewers were saying this was too runny of a batter, I thought it was perfect as is.

Crunchy Cheddar Chicken

I used Panko breakcrumbs instead of cornflakes because it's what I had on hand. This was a good, simple weeknight recipe. I enjoyed the crunch. I think this would be good to try with different cheeses as well for a different flavor.

Hot Pepper Jelly

This was delicious. We used it as a topping for Chicken Flautas (also from this website). I modified the pepper ratios to suit our spicier taste. I used about 3 cups of jalapenos and 1 each of red & green bell peppers. Even after this modification, it was still sweet, I think I could have upped the jalapenos even further. I used 4 tbs pectin, and that was a very thick jelly. I think next time I will reduce to 3 tbs. I also used the inversion method to set.

Chicken Flautas

Made a few modifications for our preferences. To cook the chicken, we made a dry rub of salt, pepper, cumin, cayenne & chili powder. Sauteed it & shredded. Used homemade salsa instead of jarred picante. We also added 3 diced fresh jalapenos to the mix. We used shredded taco blend cheese & put in only about 6 ounces total to the mix & used about 2 more ounces on top of the wrapped flautas. We tried rolling as directed, but found it difficult. So we switched to stuffing & rolling the shells before we fried them. That seemed to work much better. We had a few different choices for topings: sour cream, guacamole & our favorite was hot pepper jelly (also from this website). Overall, it's a great starter recipe, great to build on & make your own.

EAGLE BRAND® Quick Chocolate Mousse

The whole family loved this, and the teenager ate up all the leftovers quickly. I tried to lighten it up a little by using fat free condensed milk & sugar free pudding mix. You wouldn't even noticed the reduced calories, it was delicious!

No-Cream Pasta Primavera

Mom wanted pasta primavera for her birthday dinner. I never made it before, so I found this recipe. Made exactly as directed, except added broccoli, and omitted the vinegar. Everyone loved it, and every last bite was devoured, no leftovers.

Easy Lemon Cookies

Really quick & easy. Hubby loved them, and my cooking club too. Update: Since the original lemon recipe turned out so well, I've experimented with a couple others as well. Chocolate cake mix with mint extract is also devine, and I recently tried strawberry cake mix with strawberry extract. Delicious. This is a wonderfully easy, versitile recipe.

Slow Cooker Chicken Stroganoff

Delicious! Followed directions exactly, except that I used reduced fat cream cheese and I added some fresh mushrooms in at the same time that I added the cream cheese & soup. Served over egg noodles. The whole family loved it & it was easy to make.

Chicken and Sausage with Bowties

The family enjoyed this. The only change that I made was to use about 1/2 the pasta & double the crushed tomatoes. Seemed like it would have been a little dry without that change. Overall, very good.

Taco Seasoning I

This was a lifesaver! I was in the middle of making tacos for dinner & had all the fixins except for taco seasoning. I grabbed the computer & whipped up this recipe. Fortunately I had all the ingredients on hand. I added the entire mix to about 1 1/2 lbs of ground beef with 2/3 cup of water. Delicious! No more packet mixes for me.

Scrambled Egg Brunch Bread

Made this for Christmas Brunch, the family really enjoyed it. I made a couple of adjustments. First, I used cooked & chopped breakfast sausage instead of ham. Second, I sauteed the veggies lightly before stuffing in the bread, and I mixed all the ingredients together before putting them in the bread instead of layering. I also about doubled the amount of red pepper. Delicious!
