Janet's Rich Banana Bread

This was so delicious & moist, we absolutely loved this recipe. The only change I made was to mash the bananas instead of slice them. I also added a few extra walnuts & softened the butter instead of melting. Absolutely a keeper, thanks for sharing!

Amazing Muffin Cups

This was a hit for the whole family at Easter Brunch. The only adjustments that I made were to use an entire red pepper, and 1/2 the cheese. Next time I will use paper liners in the muffin tin, it was tough to clean out without them.

Velvety Walnut Fudge Pie

Bow Ties with Sausage, Tomatoes and Cream

My family absolutely loves this recipe. For those who are having trouble with the sauce, here's a couple of pointers. First, there is no need to chop the tomatoes before you put them in the pan. I use a can of whole, peeled tomatoes (in juice) and pour them right into the pan. Then, I pull out my potato masher & mash them right up in the pan. Next, it is imperative to mix the cooked pasta into the sauce mix and let it sit for a few minutes before serving. Do not rinse the pasta - you need the starch to thicken up the sauce. We've also tried the recipe with bacon in place of the sausage - both options are equally delicious. I also like to use poultry sausage instead of traditional pork sausage to lighten it up a little bit. That may be a good option for those who are saying it is too greasy. I alo like to use penne instead of bow tie pasta as it holds the sauce better.

Creamy Chicken and Wild Rice Soup

My family absolutely loved this recipe. When I sauteed the chicken, I added a couple of cloves of chopped garlic for our family's preferences. Other than that, I followed the recipe exactly. Thanks for sharing, it is delicious and will be a repeat recipe at my house!

Cheesy Chicken Poblano Chowder

When my husband sat down to dinner, he said, "I don't know, I'll try anything once." That tune quickly changed to "this is really good, we have a keeper." I stayed pretty true to the recipes. For the chicken, I diced up 2 large breasts & sprinkled them with taco seasoning in a sautee pan. When I melted the butter, I threw in a few minced garlic cloves. Instead of mixing the cheese into the soup, I just put some on top when I served the soup. For the tortilla strips, I slice up a couple of shoft taco shells, put a little olive oil on them & baked them in the oven until they were crisp. Really, really tasty soup, lots of flavor.

Quick and Easy Green Chile Chicken Enchilada Casserole

This was delicious. I skipped charring the tortillas per advice from other reviewers. I also mixed the sour cream in with the cooked chiken to make it easier to spread in the casserole. I also added a can of diced green chilis into the chicken mixture for a little more flavor. I prepared everything the previous night & popped it in the over the next day afer work. My whole family liked it, including my picky husband who is not a mexican food fan in general.

Strawberry Avocado Salad

I was a little bit leery to try mixing strawberries with avocado, but I have to admit that this was a very tasty dish. I brought it to my monthly cooking club when we had a strawberries theme. I would make this one again.

This was a really cute clever dish. I substituted orange extract for the liqueur beause it was all I had on hand. I think I would have preferred a different flavor other than the orange. Maybe vanilla next time?

Meatiest Vegetarian Chili From Your Slow Cooker

Delicious! I made this recipe for my monthly cooking club when we had a tofu theme. Very hearty, and had a nice smokey flavor without being too spicy. Every last drop was eaten!

Winter Leek and Potato Soup

Really good soup for a cold night. When it was done cooking, I used my immersion blender to puree some of the soup so it was a smooth, thick consistency. I still left some potato chunks to enjoy as well. Served with sandwiches for a quick and easy weeknight dinner.

Hot Tamale Pie

My family loved this recipe. The only changes that I made were to substitute ground chicken for the beef, and to sautee some garlic while the meat was cooking to add some flavor. Very tasty new recipe to add to our rotation. Thanks!

Chicken Rotini Stovetop Casserole

The whole family loved this recipe. I did reduce the # of pans by boiling the water in one pan, & cooking the chicken & veggies in another pan. When the pasta was done, I drained it & made the sauce in the pasta pan, then mixed it all together in the pan with the chicken & vegies. I also used a while red pepper instead of 1/2 red & 1/2 green because it's what I had on hand. Everything was delicious!

Chinese Firecrackers

These were amazing. So much flavor in a small bite. I was short on time, so instead of making the "firecrackers" out of phyllo dough sheets, I brought the pre-formed frozen phyllo shells. I stuffed the filling into the shells & heated them up.

Chicken 'n' Biscuits

My family really enjoyed this recipe. The only complaint my husband had was "too many carrots" so I will change up the veggies that I use next time. I also think it could use a little more seasoning - salt & pepper & some more onions. I skipped the bacon, but may try it next time to pick up some of the saltiness. Overall delicious, it's a keeper!

Quiche Supreme

I substituted red pepper for green (and I used a whole pepper insteaf of just 1 tbs). I also used fresh mushrooms instead of canned. Made this for Thanksgiving bruch & it was a hit! Great recipe.

The Best Meatballs

I made a couple of changes here. For the meat I used 1 lb ground beef & 1 lb ground mild pork sausage. Also, instead of frying them, I placed under the broiler & rotated them a couple of times until they were evenly brown. I finished cooking them in my sauce & served with the "Worlds Best Lasagna" also from this site. Delicious!
