Broccoli Potato Bake
I adore this recipe, just as it is. Another reviewer mentioned that they didn't think it made enough food for all of their guests. I don't think it's intended to be a main course, just a side dish. You can certainly double it (or more) to make a larger, main-dish meal. For my boyfriend and I, this recipe makes enough for both of us with a lot of leftovers. I often don't measure out hashbrowns or broccoli since they generally come in different sized bags than what is used in the recipe, so it varies some each time. It's always delicious, though, and very easy to make.

Faken (Veggie Bacon)
I've been a vegetarian for about eight years so it's been a while since I've had real bacon. According to memory, this stuff does not taste like bacon, but I actually really enjoyed it. It has a nice smoked taste. It smelled like maple syrup at first when cooking but does not taste at all like it when it is done. I made it to use in some breakfast pockets so I needed it to be in little pieces. It was a little bit difficult to get the tofu into proper strips, even more so to flip them. I ended up breaking it apart since that's the way I needed them to be anyway. It was fast and easy to make and tasted great in the breakfast pockets. I will make this again.

Easy Fruit Cobbler
This is a simple, easy, fast, flexible recipe. I was in a rush and I only spent a few minutes throwing this together but it turned out delicious. I used vanilla soy milk because I was out of milk and I didn't measure the butter. I also used cherries, blueberries, and banana. I stirred even though it says not to, but I am glad I did. It is soft and gooey and so delicious! I'll definitely use this one again.
