Banana Cake VI

Very moist banana cake! I used two bananas. I left it in the oven for about an hour and ten minutes. I covered it with foil and put it in the freezer for 45 minutes. There were definitely parts of the cake that were still warm after the 45 minutes, but I really wanted to go to bed so I threw it in the fridge for the rest of the night and it turned out great. I did not get a chance to make frosting for this cake but it was really great without the frosting too.

Vegan Chocolate Cake

Good cupcakes. I used balsamic vinegar and added some cayenne to half the batch. It was great. I made a vegan ganache with semi-sweet chocolate and coconut milk to frost them.

Butternut Mascarpone Gnocchi

I loved the butternut ravioli from Chef John's website, but this was not as good. It just tasted like fried cheese. If I'm going to make something with butternut squash and mascarpone, then i want the ravioli. Maybe this would be better with less cheese.

Eggnog Thumbprints

So far these are really average cookies. I'm not a huge fan of icing so that's probably why I'm not crazy about them. They are kind of weird in that it is really difficult to tell when they are done baking. They don't really brown on the edges or anything. I'm curious to see if they taste different after a few days of settling with the icing.

Mushroom and Mascarpone Ravioli

There's a lot of Mascarpone in this filling--maybe too much? It is also a labor intensive dish, not only because of the ravioli making but also because if you don't have a food processor then you have to chop the mushrooms by hand and that takes forever. Remember the mushrooms will shrink in the skillet, so the mushroom pieces don't have to be too tiny. I used shiitake.

Hungarian Mushroom Soup

This soup was not bad. It was easy because all I had to do was chop the onions and wash the pre-chopped mushrooms. Next time I would use some red wine if I had some around. Some carrots might also be nice. I liked the color but after I put the sour cream into the soup it didn't really mix well. I'm not sure if the soup was too hot or cold or what? No one else appears to have had this problem. I don't typically have sour cream in the fridge so next time I probably won't even bother with it. It isn't essential.

Chef John's Minestrone Soup

This soup was decent. Very hearty and very thick. Be sure to have a giant dutch oven to make it in. This time I put in one italian sausage. Next time I'd like to do 2 or maybe even 3 because the sausage is the best part. I also think it needs mushrooms. The tomato flavor is pretty overwhelming. I think next time I'll try some red wine to give it a different flavor. All I really taste is tomato and chili flakes.

Sweet Potato and Black Bean Chili

I think I doubled the chili pepper by accident and it was awesome. Veggie broth also makes it supper yummy. Don't skip on the chocolate it makes the flavor really good.
