Basic Indian Curry with Paneer

Solid basic concept. I upped the spices to a teaspoon each, adding fenugreek, crushed mustard seed, and red pepper flakes, used scarlet runner beans, spinach and chopped green pepper. Used light sour cream at the end. Delicious.

Tomato Sauce

Fish Sinigang (Tilapia) - Filipino Sour Broth Dish

Nice! I found tamarind paste at Whole Foods. I garlic, ginger, fish sauce, soy sauce to the base and mushrooms, too. The depth of the broth bloomed after about 15 minutes or so, right out of the pot it was still a bit thin. But it was really good, sour, comforting soup. I also added very thin brown rice noodles.

Fresh Southern Peach Cobbler

I made this exactly as is minus the nutmeg and extra cinnamon on top and it was perfect, maybe the best fruit dessert ever.

Chicken Paprikash

The dumplings were meh but a nice intro to the sauce, which came out well with yogurt swapped in for the sour cream. Also, I think the bacon-y smoked paprika is what's up in this dish.

Chicken Tikka Masala

This is my first time making this recipe and it turned out great, and I modified tons based on what was around the house. For the marinade I used apple cider vinegar instead of lemon. I also doubled the sauce based on previous reviews, using a large can of diced tomatoes and a half a can of Trader Joe's Lite coconut milk. Spice-wise I split paprika, cumin & garam masala. I found the sauce really thickened up in the last few minutes there. Also, I baked the chicken first. Next time I might add more spice. Great intro to the whole concept. Super yum sauce leftover.
