Carrot Recipe

I Loved this. I served for breakfast. My picky texture family didn't like it but they made up there minds before they even tasted it. I am giving 5 stars because I thought it was amazing. I made 1/2 the recipe because I didn't have enough carrots. I also substituted Vanilla Almond Milk because of milk allergies in my family. I also used a combination of cashews and almonds. I cut the butter in 1/2 and didn't add any sugar at all. The vanilla almond milk made it sweet enough. I added a little of the carrot milk out of the pan to the pan with the nuts. Instead of cardamon I used a pinch of pumpkin pie spice. SOOO Yummy.

Mom's Turkey Sausage Patties

These sausage patties turned out amazing. I have made two other Turkey sausage recipes that were more involved; this one is much better. More ingredients doesn't always mean more flavor. Yummy! My 3yr old nearly bit my finger off taking a second bite (little Piranha)!

Sausage Rice Casserole

Great Recipe! However, I am the leftover queen so I took leftover fried rice from some take out, grilled chicken sausages, some leftover grilled veggies along with leftover enchilada sauce mixed with the cream of chicken and cream of mushroom soup.. Added onion powder, garlic powder and pepper and it was amazing my family loved it.

Banana Banana Bread

As usual I tweaked this recipe in an effort to make it healthier and more nutritious. It turned out AMAZING! I used 1 cup whole wheat flour and 1 cup of brown rice flour. I used 1/2 a stick of butter and a 1/2 cup of applesauce. Instead of sugar I used 1/4 cup Agave and a little more than a 1/4 cup of Honey. I used 3 Bananas. I added 1 TBS Cinnamon, 2 tsp Nutmeg, 1/2 C of Heath Toffee chips, 1/2 Cup ground Almonds, 1/2 C chopped Walnuts, 2 TBS Cocoa powder, 1 tsp Vanilla, 1tsp Almond extract. This turned out Moist and Amazing! So Yummy everyone ate it up immediately. Oh I did cook it for 60-70 mins.

Four Cheese Margherita Pizza

Love this Pizza it is Sooo Good! I tweaked it a little. I used a package of pizza dough and added rosemary, garlic and sea salt to the dough. My family including my 2 year old who is so finicky these days loved it. Make two because one won't be enough.

Asian Roll Lettuce Wrap

These are SOOO amazing...I won't be frequenting my favorite Thai restaurant to order lettuce wraps when I can make these at home. I used ground turkey and browned in pain adding all sauce and rice. They were PERFECT! YUMMY!

Grilled Tilapia with Mango Salsa

I have used this recipes for years...Absolutely love the Tilapia marinade. Everyone I feed this too asks for the recipe even non-fish-eaters. No need to tweek this marinade it is perfect on its own. Not so keen on the mango salsa but I have never liked Mangos.

Spinach Brownies

This recipe is super yum! I altered it a bit...instead of white flour I used 1/2 Cup brown rice flour and 1/2 Cup whole wheat flour. I used an 8oz bag of fresh spinach. Also, I added 2 TBS real bacon bits, 1/2 C. diced onions 1/4 C. shredded carrots and 2 TBS chopped sun dried tomatoes (I sauteed all of this in pan together in olive oil before adding to recipe). Used Sea Salt. I also substituted 1/2 C of sharp cheddar and 1/2 C Parmesan. OK So I pretty much rewrote the entire recipe anyway it turned out magnificent. Oh by the way I used a 7X11ish pan and it only took 25-30mins to cook but I accidentally set my oven to 400'. They did come out pretty thin so I think they would be tiny if you used larger pan. If you want thick Brownie double the recipe.

Chicken Tikka Masala

This is totally YUM...Tastes just like how my favorite Indian Restaurant prepares it with out the high price tag. I used 1/2 and 1/2 instead of heavy cream and pureed fire roasted tomatoes instead of tomato sauce. I also did not brown the chicken just cooked it in the pan first.

Orange Breakfast Crunch Topping

All I can say is....YUMMMMMY! Just made this it was quick and simple. I doubled the recipe and cooked it in a larger casserole dish. I thought it was pretty sweet on its own but as a topping its PERFECT. I packed my brown sugar pretty tight might want a looser pack. Just a quick note for people who have never made a granola before; when you pull it out of the oven it will still be moist but as it cools it drys out. So don't cook over 30min or it will be very hard. OH and the house smelled AMAZING while it was cooking. I wanted to lick the walls.

RWOP Finalist: Breakfast Empanadas with Chipotle Cream

My family and I really enjoyed these they were really easy to make. I substituted turkey breakfast sausage I already had prepared from a recipe on this site. Also, I used pepper jack cheese, real bacon bits and spooned in some tomatoes. The chipotle sauce was amazing I didn't cook it though. I let the cream cheese get room temperature and blended it in my Vita Mix. Recipe was very easy. I will double the recipe next time to make sure I have extras.
