Roasted Garlic and Eggplant Soup

Subbed in tomato paste and milk and added roasted red pepper. At first I wasn't too keen on the just-made soup - flavor was very subtle and it didn't seem to taste as good as the ingredients before they went into the soup. But as the days went on, the flavor kept getting better and better. Don't think it will be on my regular soup schedule, but when I want something 'different', this will be it. PS - For my last bowl, I added some mild-med grating cheese - wow

Irish Bacon And Cabbage Soup

Very good soup. As per other reviewers added a med onion, 1 garlic clove and lots more water and chicken bouillon cubes.

Roasted Garlic Cauliflower

Added some cut up red pepper & chopped fresh parsley. Wasn't looking forward to burnt garlic, so I used some garlic powder. After 10min of cooking I added the chopped garlic and that worked out great. Hubby loved this, I think it still needs a little something, will play with it some more. But thanks for the recipe, we will now be eating more cauliflower with our meal.

Broccoli Soup

Good soup - not terrific but definitely good. Used an extra clove of garlic and added hot pepper flakes while the potatoes were cooking. Used fresh broccoli and cut the stem all the way up til the broccoli flowerettes separated, then cut the stem into small pieces. Cooked the stem pieces with the potato, then pureed it well. Then added half the flowerettes and quickly pureed it, then added the remaining flowerettes and cooked the soup an additional 5min. Be careful cooking the soup after it has been pureed, it can stick and burn in the bottom of the pot. Omitted the nutmeg.

Amish Macaroni Salad

Very good! Following others' advice, I doubled the pasta, halved the dressing and used 4 hard-boiled eggs. Didn't have celery on hand - can't buy dill relish here so I substituted 1/4 homemade dill pickle and no Miracle Whip available either, so used Mayonesa con Limon. And since I halved the dressing, only used 1/8c sugar. Tangy and sweet - will definitely be making it again! Thank you!

Marshmallow Treats

Use Cocoa Krispies instead !!! You`ll never go back to the originals LOL. I prefer these slightly non-gooey so I up the cereal to 6cups and add a bit of vanilla to the melting marshmallows. Here in Costa Rica the locals never had tried rice krispie treats - I am now `expected` to bring them to any party I go to.

Apple Crisp with Oat Topping

Hubby loved it, as is - but we have a limited variety of apples in Costa Rica so I felt something was needed to make up for the lack of flavor in the apples. Made 2 different versions: doubled the cinnamon for both. In one version added a handful of raisins and mixed in a portion of the topping into the apples. In the second version I added vanilla to the apples and chopped walnuts to the topping, and again mixed some of the topping in with the apples. Hubby called these 2 versions 'OUTSTANDING'.

Orange Rice Medley

Wonderful change from our usual rice. Omitted the canned mandarin oranges and used fresh squeezed mandarin orange juice (these oranges are in season here at the moment). It tastes fresh and light - have already made the recipe a couple of times.

Barbara's Salad

Living in Costa Rica I needed to change the recipe a bit: Instead of ham I used a cooked pork chop. Also used 2 types of lettuce to liven things up a bit. Didnt have any grapes on hand. Chunked up a couple of slices of pineapple and tried to puree them in my blender - no go, so added a couple of cherry tomatoes and about 1/8c apple Juice. The result was AMAZING! Even hubby who is not a big fan of salads LOVED this one - last week we ate in 3 days in a row! Thank you both very much for the inspiration!

Spicy Baked Feta (Feta Psiti)

Excellent as is! I used my own home-made feta, and didn't measure anything. I was worried the pepper flakes would be too hot but they just added a really nice piquancy. Can't wait to make it for friends & family!
