About this Cook
Recently moved to a very rural area in Costa Rica, and sometimes finding specific ingredients is a challenge. With my garden and greenhouse starting to produce I am slowly experimenting with creating my own recipes - I used to follow recipes to the letter! Hubby says "Be creative!" (about 2 weeks later): I'm now starting to make my own cheese - what a thrill!
My favorite things to cook
bread - I can only find white and whole wheat flour in my area - anyone visting me has to bring rye flour! LOL cakes - used to be only chocolate but will be experimenting with local fruits. cookies - they are expensive here and the variety isn't great - gotta start making my own!
My favorite family cooking traditions
My polish great-aunt taught me how to make pierogy. Hubby had never tasted them the way they were meant to be served - filled with feta cheese (AKA shepherd's cheese).
My cooking triumphs
My worker occasionally brings me bananas and I bake up banana bread for me and him. One time he brought me some really big bananas, when they started turning black I used them in a chocolate banana bread, but boy were the 'bananas' tough - I had trouble cutting them up with a knife! F i n a l l y got them mashed, and proceeded as usual. Next day when I offered him the bread his eyes opened wide and he was reluctant to taste the bread - it turns out he had given me platano! (plantain). After I assured him the bread tasted good he gave it a try, and agreed with me. But he did warn me not to eat platano raw, as it will give you a bad case of the runs!

Broccoli Soup
Good soup - not terrific but definitely good. Used an extra clove of garlic and added hot pepper flakes while the potatoes were cooking. Used fresh broccoli and cut the stem all the way up til the broccoli flowerettes separated, then cut the stem into small pieces. Cooked the stem pieces with the potato, then pureed it well. Then added half the flowerettes and quickly pureed it, then added the remaining flowerettes and cooked the soup an additional 5min. Be careful cooking the soup after it has been pureed, it can stick and burn in the bottom of the pot. Omitted the nutmeg.

Amish Macaroni Salad
Very good! Following others' advice, I doubled the pasta, halved the dressing and used 4 hard-boiled eggs. Didn't have celery on hand - can't buy dill relish here so I substituted 1/4 homemade dill pickle and no Miracle Whip available either, so used Mayonesa con Limon. And since I halved the dressing, only used 1/8c sugar. Tangy and sweet - will definitely be making it again! Thank you!
