Chili Rellenos Casserole

Reviewed: Apr. 18, 2015
Should have been good, but it was a hot mess. Perhaps it would be best made in a 9X13 dish I don't know, but that seemed way too big, so I took other reviewers' advice and used an 8X8. Also omitted the plain milk and just added the whole can of evaporated (why waste it?) and used half the cheese, which was enough. Used roasted hatch chiles. Came out a soupy mess, even after cooking it longer and letting it rest. I sprinkled some cilantro and green onions on it to see if that made any difference in taste and it relly didn't add anything. won't be making again.

What a waster of cranberry sauce, bland and did not caramelize.

Italian Drunken Noodles

Reviewed: Apr. 1, 2015
Bland in spite of all the herbs, yet overly salty. I questioned the amount of ingredients for just 8 ounces of pasta but it did seem to need all the tomatoes, not sure about 3 peppers though. Recipe in the shredder.

Cilantro Egg Salad

Pretty good. A bit heavy on the cilantro. Still with all the ingredients it was on the bland side.

Jambalaya

Reviewed: Feb. 25, 2015
Mixing italian tomatoes, worchestershire sauce, and hot pepper cauce in a jambalaya recipe was a disaster. The salt proportion was way too much, and cooking rice in an already finished dish is just nuts. Salvaged it with some extra saltless cajun seasoning to some degree but do yourself a favor and avoid this one!

Orange Cilantro Rice

Reviewed: Feb. 11, 2015
Very bland. Orange overpowered everything else. Didn't use as much cumin because 2 tsp is way too much. Deleted.

I omitted the beans and made it as more of a chicken with white sauce and it turned out good.

Old Charleston Style Shrimp and Grits

Reviewed: Jan. 31, 2015
Never had shrimp and grits before, so can't compare. This was a strange marriage of jambalaya and creamy polenta. I didn't think they belonged together, but separate they are delicious. Won't make again.

Grilled Lemon Chicken

Reviewed: Sep. 25, 2014
This was pretty good. Will keep in the recipe box, but it wasn't outstanding or anything. Didn't add the red pepper in the marinade because I thought it pointless.

Grandma's Corn Pudding

Reviewed: Sep. 25, 2014
Taste is there but...can I say...there is too much corn! Could do withour the whole kernel corn. No texture. Might try again without the whole kernel corn.

Spanish Rice Bake

Reviewed: Sep. 24, 2014
I had no problem with the rice. I think the reason some people had undercooked rice is that they did not cover the pot during cooking. Also for the chili sauce you have to use the kind more similar to cocktail sauce rather than the Siracha type if you're following the recipe. I used a whole green pepper because it's silly to waste the rest of it and actually it could have used more. Also cooked the spices with the meat and used a single pot. Didn't use any cheese, authentic Spanish rice doesn't include cheese; even though this is not an authentic version it's still pretty good and easy to make.

Grilled Lemon Yogurt Chicken

Reviewed: Jul. 8, 2014
This was OK...it seemed it would be more compatable with fish though. The chicken came out moist. and it was ok tasting, but not memorable. Will not be making again. I didn't make the sauce because I have no idea what harissa is.
