#22 Sour Cream Spice Cake with Orange Butter Frosting

This is it!! Finally a go-to cake from the Cake Project Book! This cake has a wonderfully moist and delicate crumb well spiced and sweetened to perfection. It does, however require 2 9" pans and will NOT fit into 8" pans
as suggested by the author. I can envision an amazing cupcake that would be wonderful without filling and this cake lends itself to either sweet or savory accents in the frosting. I did, however have to modify the frosting recipe as printed in the book; it
was so not enough to cover the cake, so I made half again as much, and seeing as 3 tablespoons (yes, tbsps!) of orange peel seemed overkill, I adjusted that down as well, and put in less sugar. A recurrent theme with
the Project Book's author (Melissa Gray) is that she hits you over the head with flavored ingredients, as if it were made for smoker's impaired taste buds...I find a cake is much more palatable with subtle flavorings,
and much is lost in overdoing it. So Hooray to this cake, I am sure I will use it as a base for others in the future. This one makes the book purchase worth it.
