Most people photograph their Red Velvet cakes sliced to show off the gorgeous red color. Mine...not so much. My seldom-used food coloring vial was as dry as the Sahara. I tried to valiantly resurrect some coloring back by carefully adding water to the vial, but I still ended up with… MORE

This is it!! Finally a go-to cake from the Cake Project Book! This cake has a wonderfully moist and delicate crumb well spiced and sweetened to perfection. It does, however require 2 9" pans and will NOT fit into 8" pans as suggested by the author. I can envision an amazing cupcake… MORE

Cake Project is back! #21, Alma's Italian Cream Cake. As usual, the Cake Project Book's author chooses the worst of the best cooks...this one is supposedly a recipe from one of the Iron Chefs. It's an overly sweet cake that was way too big for the 2-8" pans she listed, so I made extra… MORE

Cake Project #20: Paula Deen's Grandgirl's Fresh Apple Cake From Georgia. OK, I am getting real tired of this cake thing. I actually bought this book, as I had it checked out from the library for over 3 months. But this "takes the cake" (pun intended). Not a bad cake, but you know how MORE

Cake Project #19: Gingerbread. Could be sweeter, it's rather bland, but it's gingerbread. Thank goodness it's only a 9 inch pan's worth. Definitely skipping the ATF gingerbread in the book, as it is made with beer and no sugar, yech! MORE

Cake Project #18: Sweet Potato Pound Cake. It has sweet potatoes in it and it weighs about 5 pounds. But, it only remotely resembles cake. More like pie in cake's clothing. To quote one of my all time favorite Thanksgiving moves "The Ghost and Mr Chicken"; "The terribleness an MORE

Cake Project #17: Drunken Monkey Banana Cake or, The Cake That Broke The Oven. That's right. As of this writing, the cake is being re-baked for going on 90 minutes now and still raw in the center. While flipping the cake after the first cooling I found only a toothpick length of cooked cake and MORE

Cake Project #16: Tunnel of Fudge Cake (named back in the 60's when that wasn't something you'd chuckle over). Not really quite a tunnel but there is a bit of fudginess in the center, not a gooey pudding as described in the Cake Project book. The author relates that "the excess sugar binds MORE

Cake Project #15: Holiday Honey Cake. Project book author suggested leaving the cake set for 24 hours before eating to "let the spices permeate the crumb". Yeah Melissa, that'll happen. 4 hours is close enough. And that was as good as it gets. Crumb permeation only made this cake much MORE

Yum. Just yum. Spice cake with mocha frosting. And it's quick to make without weirdo ingredients. A keeper, definitely not an "office" cake! MORE
