My family really loved this recipe. The only thing I changed was to use fresh cilantro and minced garlic in the marinade.

I though recipe was very good. The only thing I changed was, I layered the cheese on top potatoes instead of mixing it into the roux.

Famous Chicken Adobo

Reviewed: Sep. 3, 2010
I made this recipe last night and I received mixed reviews, although all I had left was rice. My husband thought it was a bit too spicy, maybe too much black pepper. Oh well.

Wow, talk about trying to eat ½ lb hamburger. All I got on this recipe was it was alright. I do like stuffed burgers, so I will try different variations.

Chili con Carne II

Reviewed: Oct. 18, 2010
I made chill last night, and it was a hit. My husband loved it, because it wasn’t spicy. I did change the recipe a little; I used black and pinto beans, instead of the red kidney beans. I also left out the chili pepper and cinnamon sticks.

Slow Cooker Beef Stew I

Reviewed: Oct. 29, 2010
I prepared Beef Stew tonight, and it was fantastic. I did not change a thing, and my husband wanted seconds. Update 10/5/11 This was great stew; my husband gave me thumbs up, which means it good. I did changes thing around though. I floured the cut up meat, and brown the meat in olive oil. I placed all the vegetables in the bottom of the slow cooker and added the browned meat on top. I used 1 ½ cups of water, instead of beef broth, turn it on high and cooked it for five hrs. Oh one other thing I omitted the Worcestershire sauce.

This was not a hit in my family. Nobody wanted seconds and I ended up freezing the leftovers. I will have to try a different beef barley soup recipe.

Beef Bourguignon II

Reviewed: Dec. 20, 2010
I made this recipe last night to mixed reviews from my family. My daughter said it was very tastily, and my husband said it was different, I though it tasted very good. The only problem I found was, it was little on the dry side, if you bake it for 2 ½ hrs.

Smothered Pork

Reviewed: Dec. 27, 2010
A very easy recipe to prepare and my husband cleaned his plate. The only change I made was to fry the pork chops in butter; remove the chops to a casserole, and added mushroom soup to the frying pan dripping plus ½ can of water. After bring the soup to a boil I then added the soup to the casserole, cover it with foil, and baked it for 30 min at 350 degrees. All in all it was very tastily.

Swedish Meatballs (Svenska Kottbullar)

Reviewed: Feb. 24, 2012
Delicious, I made this meal last night; it rivals Ilea’s Swedish meatballs. Although the prep time, for me, was longer, I still had the meal completed in 2 ½ hrs. I served it on buttered egg noodles, baked red potatoes and a dollop of red raspberry preserves.

These chicken enchiladas are very good and full of flavor. I did make a few changes. I used cream of chicken soup (large can) more chicken and cheese. It was a big hit in my family, and I plan on making this recipe again.
