Easy Chicken and Broccoli Casserole

Reviewed: Oct. 23, 2012
i changed a lot...added sauteed onions, fresh mushroom slices, fat free cheddar, a little reduced fat feta and did not add curry powder or sliced almonds. it was kind of weird, but i will use this recipe as a base and try it again. i think it definitely needs a top crust.

Turkey Taco Soup

Reviewed: Sep. 30, 2012
my first bowl was ok, but i decided the canned tomatoes were the spoiling the dish for me. i removed all of them and loved the dish after that. i will make again with/out canned tomatoes.

Spinach and Leek White Bean Soup

Reviewed: Aug. 6, 2012
excellent flavors since i followed the suggestions to use thyme and rosemary instead of cumin and added spinach to each bowl individually to prevent from getting grossy. i added parmesan on top and added chopped celery to the leeks because i had some in my refrigerator. i will use the celery again. also, next time i will use dry beans. the canned don't hold up and get mushy. flavor is still awesome!

Miracle Soup

Reviewed: Jul. 24, 2012
pretty good base but a little salty. i used low fat ground turkey instead of shrimp which worked fine. i also used sugar instead of fructose and added fresh spinach as served. i will make again with these changes and probably use only fresh vegetables next time.

Reduced Fat Potato Soup

Reviewed: Jul. 17, 2012
delicious! to me it tastes more like chicken pot pie soup, therefore next time i might add peas and carrots. anyhow, it is a great base and you can it as is or add whatever you like to it. keeper!!

Simple Turkey Chili

this recipe has good flavor for a starting point, but i like a lot more "stuff" in mine. i added corn and green peppers and it was good, but next time i will add more "stuff".

Make-Ahead Moroccan Lamb Stew

Reviewed: Dec. 11, 2011
pretty good, but way too sweet for me and too oily. i added more broth, more salt and next time i will use a lean ground turkey. also, one sweet potato was definitely plenty.

Healing Cabbage Soup

Reviewed: Nov. 30, 2011
delicious! i think i prefer the chicken broth flavor over the tomato base that the other cabbage soups have. i added potatoes, carrots, celery and of course MORE garlic because i had it on hand. i think the additions added a lot. also, a splash of hot sauce is always good!!

Vegetarian Tortilla Stew

Reviewed: Oct. 25, 2011
i make a lot of quick soups and i really love the enchilada sauce for the base for the recipe, but that is the best part. i doubled up on most of the seasonings and used real chicken, but there just wasn't enough to the soup. i may reuse the recipe as a base in the future, but add much more stuff to it to achieve the texture and flavor i like.

this recipe is a great starting point, but i cooked the recipe as is and added a ton of minced and garlic to the meat and felt like it needed more flavor.

Spinach and Yogurt Soup

Reviewed: Nov. 30, 2010
reminds me of a healthy cream of spinach soup. i amped it up with a ton of garlic and parmesan. i believe it is a good starting canvas which can be quite delicious once you doctor it up to your taste. i will make it again. with a red garnish such as tomatoes or red peppers this could be a fun holiday dish!

Beef Stroganoff III

Reviewed: Oct. 19, 2010
this was pretty delicious. i actually made two dishes. 1. exactly by the recipe - yum and 2. a more low fat chicken version - pam instead of butter, chicken broth instead of beef broth and fat free sour cream onion dip instead of sour cream. it was awesome! i really don't think the chicken version needed to be cooked as long.
