J.P.'s Big Daddy Biscuits

Reviewed: Jun. 24, 2010
This will forever be my favorite biscuit recipe. I let my biscuits sit out for about 15 minutes before I popped them in the oven and they puffed up beautifully and tasted amazing! I cut some of them too thick though, so a few of them were pretty doughy even though they were cooked on the outside.

Chocolate Brownies

Reviewed: Feb. 6, 2011
These definitely did not come out the way I was expecting them to, based upon other reviews. I made a few changes: I used only 1 egg, a little more sugar, and a little more peanut butter. The 'brownies' ended up very crumbly and not at all chocolaty. In fact, they tasted more like a giant sheet of brown peanut butter cookies.

Four Cheese Macaroni and Cheese

Reviewed: Feb. 13, 2011
This turned out tasting strange. There was far too much cheese in it for us. The egg on top also made it taste strange. This would be a good recipe if the amount of cheese was reduced by half.

Stuffed Chicken Valentino

Reviewed: Feb. 15, 2011
This turned out wonderful! My boyfriend, a fairly inexperienced cook, was able to assemble and cook this with no help from me at all. The only bad thing about this recipe is that when we took the chicken out of the oven after broiling, it was still not cooked in some places. It might be because our oven is ancient, but either way, we cooked the chicken on 350 for about 10 more minutes and it still came out moist and tender. Will definitely be making this again!

Peanut Butter Ice Cream Pie II

Reviewed: Feb. 15, 2011
This is a good base recipe, but by itself is a little too rich and not quite what I was expecting it to be. It WAS delicious, but I could barely get through a single slice! I would recommend less peanut butter, and maybe using an ice cream with fudge pieces or the like.

I am in love with this recipe. It was super easy, SUPER tasty, and really inexpensive to make! It was a nice, different option for a Saturday night dinner!

Happy Soup

Reviewed: Jun. 7, 2011
This a very lovely soup. I always favor soups with pure, light flavor, especially when you have a sick hubby to take care of! The name of this recipe says it all.

Burgundy Pork Tenderloin

Reviewed: Jun. 28, 2011
This recipe came out perfectly! The burgundy really brings out the flavors of the pork. I wasn't able to salvage the leftover liquid for a sauce though, the wine I used was just too bitter for our tastes. Best served, as others have suggested, with skin-on mashed potatoes and a veggie side.

Mac and Cheese Soup

Reviewed: Sep. 5, 2011
I was a little skeptical when I first saw this recipe, and when I went grocery shopping bought a few things to add to the recipe if I didn't like it. However, once I finished the directions, I tasted it and fell in love!! I made too much macaroni, so it turned out more like actual mac n cheese (and after it set overnight, it really WAS) but I adored it. I will definitely be making this again!

Beef Tips and Noodles

Reviewed: Sep. 16, 2011
This is so. Good. I have a suspicion that this would taste great with just about any cut of meat. The only thing I didn't think about was making more sauce! The recipe definitely does not make enough on its own. I was left with nearly half the egg noodles and nothing to put on them!

Triple Fudge Brownies

Dense, spongy, cakey, fudgy.. This recipe has all the best aspects of brownies in one! Will definitely make again.

Gnocchi I

Reviewed: Oct. 21, 2011
I made this recipe tonight and to be honest, I was a little intimidated by it. In the end, my gnocchi turned out better than the stuff they have at Olive Garden, but still nowhere near my expectations. My gnocchi had a strange texture, and I couldn't finish my portion. I think this recipe takes a little skill to really pull off, and that was just something I didn't expect going into this. The gnocchi had good flavor, but I probably wouldn't make this again.

Mama's Balsamic Vinaigrette

Reviewed: Dec. 27, 2011
I loved this. I left out the Dijon because I didn't have any, but this dressing turned out lovely even without it. I think it's largely because of the balsamic vinegar I have, but this vinaigrette is absolutely addictive.
