Vegetarian Chickpea Sandwich Filling

This is my new go-to lunch recipe!! I added some garlic powder as per some reviewer's suggestions and definitely didn't use 1/2 an onion, maybe 1/2 cup chopped. With these alterations this recipe is to die for! So good on pita bread with cucumber and a yogurt sauce.

Cucumber Sandwiches III

I didn't have enough mayonnaise, so I substituted half of it with sour cream, let it sit overnight and the spread turned out great! This is definitely best with a really soft bread.

Onion Soup Pork Chops

This recipe was DELICIOUS! I ended up using 3 boxes of Rice a Roni wild rice without the seasoning packets (I doubled the recipe) and reducing the water to only 5 cups. When I took it out of the oven after an hour, the rice still wasn't done yet, but I let it sit with the foil still on the dish and about 10 minutes later the rice was perfect! I was surprised how tender the pork chops were. Next time I'll definitely add some mushrooms and maybe some carrots.

Pumpkin Cheesecake II

This recipe turned out so lovely. I added a little bit more pumpkin puree as a personal preference, as well as some more spice to even it out. I used neufchatel in place of cream cheese and fat free sour cream to reduce the heaviness of the dish and it still turned out rich and creamy! The only complaint I have is that the given recipe makes so much pie filling that I had to put some of it in a third (albeit much more shallow) pie! Overall I loved the simplicity of the dish, and the hubby loved it too!

Fluffy Pancakes

This recipe was great, but I had to add another 1/4 cup of milk (1 cup altogether) to get these to cook! Otherwise they just sat on the griddle and made pancakes about 1/2 inch thick that never got done all the way.

Chi Tan T'ang (Egg Drop Soup)

The combination of bouillon and soy sauce makes this too salty. Next time I'll make it with some real chicken broth. Otherwise this was an awesome soup!

Mama's Balsamic Vinaigrette

I loved this. I left out the Dijon because I didn't have any, but this dressing turned out lovely even without it. I think it's largely because of the balsamic vinegar I have, but this vinaigrette is absolutely addictive.

Gnocchi I

I made this recipe tonight and to be honest, I was a little intimidated by it. In the end, my gnocchi turned out better than the stuff they have at Olive Garden, but still nowhere near my expectations. My gnocchi had a strange texture, and I couldn't finish my portion. I think this recipe takes a little skill to really pull off, and that was just something I didn't expect going into this. The gnocchi had good flavor, but I probably wouldn't make this again.

Beef Tips and Noodles

This is so. Good. I have a suspicion that this would taste great with just about any cut of meat. The only thing I didn't think about was making more sauce! The recipe definitely does not make enough on its own. I was left with nearly half the egg noodles and nothing to put on them!

Mac and Cheese Soup

I was a little skeptical when I first saw this recipe, and when I went grocery shopping bought a few things to add to the recipe if I didn't like it. However, once I finished the directions, I tasted it and fell in love!! I made too much macaroni, so it turned out more like actual mac n cheese (and after it set overnight, it really WAS) but I adored it. I will definitely be making this again!

Burgundy Pork Tenderloin

This recipe came out perfectly! The burgundy really brings out the flavors of the pork. I wasn't able to salvage the leftover liquid for a sauce though, the wine I used was just too bitter for our tastes. Best served, as others have suggested, with skin-on mashed potatoes and a veggie side.
