Vegan Pancakes

I originally tried this because I was out of eggs, but now it's my default recipe. The texture is great; I add a little vanilla but change nothing else. Be warned that the "nine pancakes" this makes are quite small--I halved the recipe and made one large (but not ridiculously large) pancake. For three people I'd probably double it.

This was delicious exactly as written, and even better using half wheat flour and half bread flour. Crusty and savory. Mmm!

Granny's Brownies

These are good the day you make them, but excellent after being stored in an airtight container overnight. I bake them for about 40 minutes at 350. Try it with a cup or so of finely shredded coconut (mixed in right before the flour).
