About this Cook
I am a flute player by trade, and my husband and I are expecting our first child in Nov 2011.
My favorite things to cook
Ratatouille (like the Pixar movie!), Mimi's Corn Chowder (so fattening, but delish), Cornbread, Strawberry Shortcake with Biscuit Men (use a gingerbread man cutter for the biscuits).
My favorite family cooking traditions
Corned Beef Hash, Homemade Skillet Dinner with evaporated milk and Parmesan cheese, and my husband makes the best homemade cheesecake and Italian Creme Cake (try vanilla instead of almond extract).
My cooking triumphs
I finally am practiced at how to make good biscuits without Bisquick mix.
My cooking tragedies
Quite a few, but most notably I forgot to pre-cook the potatoes for a potato casserole last month. My in-laws were nice and didn't say anything, but when we heated up leftovers two days later, my husband mentioned how crunchy they were, oy vey!

Summertime Tilapia
Great recipe. My family is small (2 servings), so we use the extra marinade on sliced summer squash and zucchini in the baking pan.

Easy Spaghetti with Tomato Sauce
Great basic recipe, my husband and I changed it a bit by sautee'ing real onions and 2 cloves garlic with the mince, then added more black pepper and dried basil to the sauce. Go easy on the basil, a little bit goes a long way. I would never have thought to add sugar to the sauce, but it makes a difference. We also only simmered for about 25 minutes, but I forgot to uncover it (splatter concern), so it was a bit runny. If you want to cover the sauce to cook, try draining the can of chopped tomatoes first to reserve, you can always add it in later if you need more liquid. Bueno!
