Grew up down at the Jersey Shore, spent about 15 years living in the Pacific NW and now I'm in League City, TX. I am an accountant by profession. Cooking is what I do for enjoyment and because I just love food.
My favorite things to cook
I love to BBQ and bake. Those are probably my favorite things to do. Give me a grill and some meat and I'm good to go! And after the grilling is done, I want some pie!
My cooking triumphs
I make a Hot Spinach Artichoke Dip that is to die for. It's kind of a knockoff from the Olive Garden's but I switched it up a bit to suit my wife's needs. And I'm working on perfecting a homemade pie crust. No more store bought crusts.

Grandma's Lemon Meringue Pie
My wife is a Lemon Meringue nut! She'd rather have Lemon Meringue than a cake on her birthday, and this is the recipe that I use. It maintains it's consistency and doesn't seem to melt like other pies I've made. I don't use the lemon zest, but I do kick in a little extra lemon juice, and a few dots of food coloring to get that nice yellow color. I like the idea of using a lemon extract, and I'll have to try that! Thanks!

Pineapple Upside-Down Cake V
This is a really good cake. I'm not a huge fan of pineapple upside down cake but my wife is. She requests this cake often and it disappears quickly. I add an extra handful of coconut because thats just how I like it, but otherwise a great recipe.

Grandma's Secret Pie Crust
I have many recipes in my folder, but this is the only pie crust I use. For me a pie crust is just something to keep the pie together but to my wife the pie crust is essential. I use this pie crust with every pie I make, Lemon Meringue, Sweet Potato, Pumpkin, and Grandma Ople's Apple Pie recipe. I change nothing in the recipe, except that I may adjust the flour or liquid to get it to where it's workable.
