Beef Stew VI

Great comfort food! Easy and came out great. I floured my meat before browning it to seal in some tenderness, but everything else I did as directed. Came out great! Easy and pretty much fool-proof.

Ultimate Spicy Spud Soup

Not bad, a little too spicy and rich for me even with no cayenne. Next time I'll use a milder sausage or something a little less greasy. We added some mashed potatoes (courtesy of Bob Evans) to thicken it up and balance out the spice a little. we were a little short on "real" potatoes and only had red ones. Mashed definitely improved the flavor. We also added a bit of chicken stock just to finish some off that we had in the fridge. We'd make another batch if in the right mood. We had plenty left of this batch to freeze half of it for later.

Mini Pumpkin Whoopie Pies

GREAT recipe. I followed the recipe as written, and I had no problem making fairly uniform cookies. (I used a baby spoon to help get the filling out of the measuring spoon, and it worked like a charm.) I also used parchment paper, and they popped right off. I would give 5 stars to the cookies. They were perfect! My only problem was with the filling. Flavor was good and well-balanced, but I think it was a little too runny. Hopefully, some time in the fridge will help solidify it a little bit. My 3-year-old sampled the first cookie before refrigeration, and she was a mess, but she's also a 3-year-old. I'll make these again when I am craving pumpkin and have a couple of hours to kill! Making these took most of two hours with my husband and my 3-year-old assisting.

Pressure Cooker Carnitas

Delicious! Followed the recipe closely, I only had one poblano, so I threw in one extra serrano and and an anaheim pepper. It cooked up perfectly in the pressure cooker. Served at a party with tortillas, guac, sour cream, and cheese... it was devoured happily. Tip: I did not enjoy chopping up a pork shoulder. You may want to ask the butcher to do that for you before leaving the grocery. Also, if you're wimpy, this meat was fairly HOT! My house still smells like peppers a few days later. I will totally make this again, and hopefully be able to skip the meat cubing. Yuck!

VanVoorst Ham Casserole

Good comfort food! I'd totally make it again. One reviewer mentioned an over-powering mustard flavor. I'm not a mustard fan, so I was nervous, but decided to roll with the recipe minus alterations. I agree that the mustard was a little over-powering in the sauce before cooking, but once the cheese melted though and worked its magic, the mustard faded into the background. The entire thing came out MUCH better than I expected after tasting the sauce prior to cooking. It was super easy and yummy. Note: The next day leftovers were kind of dry and disappointing, so you might want to make two small casseroles and bake separately if you're making two meals of it.

Maman's Fresh Strawberry Rhubarb Pie

Yummy. My grandma used to make a fresh strawberry pie sort of like this, so I thought I'd add a few of her tricks. For one thing, I used a regular pie crust, poked it with a fork, and baked it before adding the filling. Graham crackers just seemed a little off. My favorite thing that she did was spread 4 ounces of cream cheese on the warm crust before placing in the halved fresh strawberries. To me this is a MUST! I also threw in some blueberries because I was a little short on strawberries. My husband and I loved this pie. It's a hard one to mess up-- just be patient and make sure that glaze is nice and thick, stirring it constantly!! I posted pictures to show the nice color added by the blueberries. This was a pretty pie.
