Unbaked Meringue

I've never made meringue before, so I wanted something that seemed foolproof. Since my pie did not need baking, I heeded the comments of the others and did not bake this meringue. It turned out wonderfully delicious with fairly good peaks (I think I merely failed to beat it long enough, but I will beat them longer next time). It was absolutely delicious (and wonderfully easy)!!

Banana Bread V

Loved this recipe! Because I prefer spiced banana bread, I added cinnamon, cloves, nutmeg, mace, allspice, and vanilla. It was delicious! My only problem was that it was a little on the dry side, but not nearly as dry as other recipes I've tried.

Easter Leg of Lamb

Delicious and easy! Used lamb chops instead of lamb leg. The rub was a little too salty for us, but we'll just cut back next time

Christmas Stollen

I was very worried it wouldn't rise properly because it hadn't increased its volume significantly after each rise. However, it fortunately rose enough while actually baking and turned out delicious! Next time, I may increase the amount of marzipan used.

Pumpkin Spice Cupcakes

Absolutely delicious! I substituted equal amount applesauce for the butter and used soy milk instead of dairy milk. I was generous with the spices and added some pecans to the batter. What a fantastic way to welcome autumn! They had great flavor and were wondrously moist.

Very easy to make. I used 7 egg yolks and all purpose flour simply because that's what I had. It was still very moist, vanilla-y, and delicious.

Extreme Chocolate Cake

Delicious! Very moist and rich without being too sweet (although I didn't use the icing, so I cannot comment on it). It was also very easy to make.

Curried Butternut Squash and Pear Soup

Delicious! Only had acorn squash, so used that instead. Also used canned pears instead of fresh. Cooking the squash in the microwave and using the canned pears cut the cooking time dramatically! Probably done in a half hour.

Marbled Pumpkin Cheesecake

I made this because I was tired of pumpkin pie and it was delicious. Very easy to make, and it didn't take too long either. We had our first piece while it was still warm from the oven and everyone loved it. I was generous with the spices and added a bit of ginger to the filling. Will probably add more next time. Also, be sure to buy good quality ginger snaps; the cheap ones I used lacked the desired intensity.

Raspberry Almond Coffeecake

The taste was delicious. I didn't have quite enough raspberries so I included blackberries and blueberries. I was generous with the extract and it was great. I did have some difficulty spreading it in the pan, so it was not the prettiest dessert I've made.

Red Velvet Cake

The taste was very good. I was a little disappointed that it used food coloring because I'm always looking for red velvet cakes that obtain their color from the cocoa. I had problems getting it to rise using the method described, and probably over folded it before baking.
