Easy and Delicious Chicken and Rice Casserole

Reviewed: Jun. 14, 2012
I have found this to be a quick and easy recipe to prepare. It is also easily adjustable to fit your family's taste. The recipe doesn't call for peas, but it's easy to see that some families like peas in this casserole. If you look at some of the other photos, there is one with mixed vegetables and another one with carrots. If you want peas in the casserole, add them; if you don't, leave them out. If you like a different cream soup, use it. It doesn't make any sense to make complaints about the recipe when someone else posts a photo that clearly shows they made some changes/additions to the recipe. Any recipe on this site can be adjusted to suit your family's preferences. Thanks for sharing the recipe J. Saunders.

Jalapeno Popper Spread

Reviewed: Sep. 20, 2011
Awesome recipe!!! Great for football parties, potluck, and any occasion that you want a super tasty and easy appetizer. I used all 4 ounces of the canned, diced jalapeno peppers and I thought it gave it the perfect amound of heat. It had a little kick without burning your mouth. I mixed the cream cheese with the mayonnaise, then added the peppers and parmesan cheese. I stirred it until everything was well blended and then put it all in my little 2-quart crockpot. I cooked it on low for 3 hours and then turned it down to warm. I took it to work and it was gone before lunch was over. I served it with Triscuits and tortilla chips. Everyone went crazy over this dish, and I had many, many requests for the recipe. I'm making this again this weekend for my granddaughter's birthday party. Thanks for sharing such a wonderful dish! :)

Curried Coconut Chicken

Very tasty and easy dish. Loads of flavor -- I really enjoyed the way the curry, coconut milk and tomatoes all melded together. It also reheats quite well.

Chipotle Crusted Pork Tenderloin

Reviewed: Sep. 12, 2010
The flavor of this pork tenderloin is amazing! I couldn't find chipotle chile powder so I used McCormick's Hot Mexican-Style Chili Powder and it was delicious. I loved the hint of heat and sweetness. I will be using this recipe often in the future. Thanks for sharing. :)

Kelsey's Favorite Stuffed Green Peppers

Reviewed: Jul. 12, 2010
This is a good basic recipe for stuffed green peppers. It makes a good starting point and allows you to personalize the dish to your own taste. I added some Italian seasoning and a little crushed red pepper flakes to the filling before stuffing the peppers. I made the recipe for 4 servings, baked two of the stuffed peppers and froze the other two stuffed peppers. I placed the pepper halves cut sides together so that it looked like one one big pepper half. Then I filled them with the stuffing mixture, poured more tomatoe sauce over them, and sprinkled a little more Italian seasoning over top. I followed the rest of the recipe as written. I served them with the suggested mashed potatoes and corn, topping the mashed potatoes with some of the excess tomato sauce as a gravy. Yum!!!

Pork Chops with Blue Cheese Gravy

Reviewed: Jun. 27, 2010
This recipe is AWESOME! So easy to make and with only a handful of ingredients. In place of the garlic powder and black pepper, I used McCormick's California Style Garlic Pepper with red bell and black pepper. I covered the chops while they were cooking. I ended up with tender, juicy, flavorful pork chops topped with mouthwatering blue cheese gravy that exploded in your mouth. Thanks for sharing this great recipe, Toni. I'll be making these often.
