I live in a country setting with my two dogs -- Maxx, a 132 lb rottweiler and Suki, a 12 lb poodle mix. I work as a secretary for a county school board. I have one son, a daughter-in-law and a beautiful granddaughter. I was born in Tokyo, Japan and moved to the states when I entered the 2nd grade. My mother was Japanese and my father was of Scottish heritage.
My favorite things to cook
I don't have any particular favorite things to cook. I enjoy trying new recipes. I also like cooking Asian, Italian and Mexican dishes, as well as "comfort" foods.

Easy and Delicious Chicken and Rice Casserole
I have found this to be a quick and easy recipe to prepare. It is also easily adjustable to fit your family's taste. The recipe doesn't call for peas, but it's easy to see that some families like peas in this casserole. If you look at some of the other photos, there is one with mixed vegetables and another one with carrots. If you want peas in the casserole, add them; if you don't, leave them out. If you like a different cream soup, use it. It doesn't make any sense to make complaints about the recipe when someone else posts a photo that clearly shows they made some changes/additions to the recipe. Any recipe on this site can be adjusted to suit your family's preferences. Thanks for sharing the recipe J. Saunders.

Jalapeno Popper Spread
Awesome recipe!!! Great for football parties, potluck, and any occasion that you want a super tasty and easy appetizer. I used all 4 ounces of the canned, diced jalapeno peppers and I thought it gave it the perfect amound of heat. It had a little kick without burning your mouth. I mixed the cream cheese with the mayonnaise, then added the peppers and parmesan cheese. I stirred it until everything was well blended and then put it all in my little 2-quart crockpot. I cooked it on low for 3 hours and then turned it down to warm. I took it to work and it was gone before lunch was over. I served it with Triscuits and tortilla chips. Everyone went crazy over this dish, and I had many, many requests for the recipe. I'm making this again this weekend for my granddaughter's birthday party. Thanks for sharing such a wonderful dish! :)

Curried Coconut Chicken
Very tasty and easy dish. Loads of flavor -- I really enjoyed the way the curry, coconut milk and tomatoes all melded together. It also reheats quite well.
