Good Old Fashioned Pancakes

This recipe was very tasty. It was as fluffy and thick as everyone says. I substituted fresh buttermilk that I had left from making homemade butter. Since buttermilk affects how baking powder works, I used 7/8 tsp. of baking soda in place of the powder. I sifted the flour twice and stirred it only enough to mix the ingredients. It took two batches to feed my family and the LOVED it.

Potato Salmon Patties

Just made these tonight.. they seemed easier than other salmon patties I've made in the past. The adults in the house loved them but I'm not entirely sure I could pull them off on the kids. I added an extra egg per some of the reviews. Thanks for the recipe and a great grown up meal.

Slow Cooker Chops

I adapted this recipe a bit. I used a couple of cans of cream of mushroom soup and less water than it called for. I also didn't have any potatoes except for mashed, so when it was done I just put the pork chop and some of the gravy (which turned out a little runny) over mashed potatoes. It turned out so tender. I absolutely loved it.

Rosemary Ranch Chicken Kabobs

Loved this recipes. Used more sugar since I know my family likes things on the sweet side. Also used orange juice (fresh squeezed) since I didn't have any lemon. Cut up some potatoes and threw it in with the marinade because there was plenty. Then I baked it all instead of kabobs. Fantastic! Will definitely do again.

Magpie's Cucumber Sauce

I'm not a big cucumber sauce fan but I thought I'd try it. I think maybe I didn't cut the cucumbers up small enough because it was really thick. Maybe next time I can use a mixer for just a few seconds thin it out.c

Pesto Sauce

I roasted the pine nuts and the garlic beforehand. I added slightly more than doubled the basil. At first, I didn't put any salt in it (per the reviews, I wasn't sure) but then added 1/4 tsp to taste. Since I roasted the garlic (and it makes it less strong and more sweet), I added 5 or 6 cloves. It turned out nicely and is currently in some icecube trays in my freezer. I can't wait to use it on chicken sandwiches and/or noodles. Thanks.

Ranch Dressing II

Five stars, with a few changes. I used 1/2 cup mayonnaise, 1/2 cup sour cream, and closer to a cup of buttermilk (I was going for dressing consistency). I fried up a couple of pieces of good bacon and crumbled it really tiny into the dressing. It also got better the longer it sat. By day two you could taste the bacon in every bite. It was fantastic and now I get to figure out how to do it again.
