Grilled Filet Mignon with Gorgonzola Cream Sauce

This sauce was awesome - it did take some time to reduce down, but well worth it. The gorgonzola was not overpowering but rich and delicious. We enjoyed the sauce on the sides we prepared as well - asparagus & baked potato. It was a wonderful Valentines Meal - at a fraction of the restaurant cost.

Easy Apple Strudel

Delicious! Served (w/van. ice cream) as part of an entire German themed meal to my book club and they raved. Wished I would have rolled the strudel over before cooking so that the crease would have been on the bottom (would have looked better) added toasted walnuts & pecans which gave the filling an added crunch. Filling was enough for two-which works out great since a box of puff pastry has 2 sheets. Once you've opened the box you might as well use both- I've tried freezing 1/2 used boxes...not so great.

Beer Can Chicken

Good, but for all the spices/seasonings I didn't think the chicken itself took on alot of the rubs flavor. And yes, I did put some spices in with the beer - next time will try to put some of the spices between the skin & meat.

My Mom's Parmesan Chicken

Made last night for a semi-quick Sunday night dinner and they were yummy! I decreased the parm & bread crumbs to 1/3 c each, but left the spices the same since I only had three breasts. Cooked 20 min's added the wine and cooked an additional 10 min. I sliced the breasts in 1/2" slices, fanned out on our plates then drizzled a little of the wine drippings over both the chicken & some homemade mashed po's - my husband & I totally enjoyed - VERY MOIST!

Spicy Garlic and Pepper Shrimp

Delicious! I shredded 1/2 whole cabbage and stir fried about 3-4 minutes. Forgot to buy the cilantro, but didn't miss - instead added 1 cup thick sliced mushrooms at same time as onion. I did have to cook considerably longer than 10 seconds to soften the onions/mushrooms at the end. My husband (who doesn't do spicy OR cabbage) really liked. Adding it to our favorites!

Hummingbird Cake III

I was pretty disappointed with this cake. After seeing the picture and reading all of the rave reviews I was excited to try this recipe out for my sons birthday. My cake was really heavy and very dense/gummy- it actually looked "uncooked" when it was cut. I won't be making this again, everyone left some on their plates - and in my family that doesn't often happen with desserts.
