New Year's Champagne Punch

Pork Tenderloin Marinade

This marinade put the "tender" in the tenderloin! It came out very moist and full of flavor too. Be sure to let the meat rest at least 5-10 minutes (covered with foil) before slicing, in order for the meat to retain all the juiciness. It's even delicious cold. Thanks for a simple and flavorful recipe!

Apple-Raisin French Toast Casserole

I served this on Easter for brunch, and had hoped it would be a top ten recipe for me, but I wasn't as pleased as some of the others were. My only complaint was that the bread was too thick. I did like the easy prep of making the night before, and putting in the oven the next morning. The flavor and moistness were perfect. I will try this recipe again with a thinner cut of the baguette.

Creamy Potato Leek Soup II

After reading other reviews, I chose to make this Potato Leek soup recipe. We loved the taste, and creaminess of it too. My family & I feel like one pound of bacon was a bit too much. I will definitely cut back on the bacon next time. I also liked the fact of not having to slave over a pot of soup all day. The quick prep and cooking time was very appealing. Like other reviews stated, I too would double the recipe to have more to go around.

Mouth-Watering Stuffed Mushrooms

These were a total hit on New Year's Eve, that we had to have them again for Superbowl Sunday. They will definitely be on the appetizer list for all our partys from now on. Thanks for the great recipe!

Kalua Pig in a Slow Cooker

I fixed this recipe to have ready for Superbowl Sunday. I scaled the recipe to 4 servings, using a 3 1/2lb pork butt. I also ajusted the seasonings for 4 servings . The roast was tender and perfect in 12 hours, on my low setting. It tasted delicious!! I will add a little more liquid smoke next time, as I love that taste in meats. We served the pork on french rolls with all our favorite condiments. I also served nachos with the usual toppings, including the pork on them. I had nachos with Kalua pork in Kauai, Ha. last fall, and loved them this way. Thanks for a tasty and simple recipe.

Barbeque Pork Two Ways

What could be easier than placing everything in one pan and serving a few hours later? I cooked this on the stovetop, and stirred every once in a while. I added about 1/4 cup of water towards the end to make a little more sauce. The meat came out tender and flavorful. I didn't say a word to my husband that I tried a new recipe, and he actually remarked how much he liked it. That's all I needed to hear.
