This was a success all the way around at my house, all 3 of my guys liked it very well. I made a few changes. Added 3 slices of bacon, which I cooked lightly and cut up. Used only 2T olive oil and 1T bacon grease, tossed oils with cauliflower in the dish I was baking it in, salted generously and put a little pepper on it, cooked at 425 for 15 minutes, then stirred and added the garlic (to keep it from burning per other reviews) and the bacon. Covered and cooked another 20 minutes, removed from oven, added the parmesan and recovered and let it sit on the stovetop while the rest of the meal finished cooking. The cauliflower was perfectly cooked with no crunch left, just the way we like it, and the flavor was awesome. Will make this again for sure!
