Ukrainian Salat Vinaigrette (Beet Salad)
Made as a side dish for Thanksgiving. I already had all the traditional sides and I was looking for something lighter, with lots of color, with seasonal produce. This hit the mark. I followed suggestion to use the smallest beets you can find and I also used the suggestion to roast the beets and potatoes in the oven. I made a day ahead and thought it was ok. I added a splash of balsamic to try to flavor it up. Tasted the next day and it was excellent! I think you need to make it 1 - 2 days in advance to allow the flavors to blend. Lots of positive feedback from guests. My sister-in-law asked to take home some of the extras. I would not use this as the only side as some people are afraid to try beets (their loss!) , but its a great dish when you are planning to have several side dish choices. It does take lots of prep, but the prep is way in advance, it looks pretty, tastes great, and doesn't need oven space the day of the party. It's too much prep for me to make as jut a regular meal but I will make this again for a party side dish.

Very Good!! Made 30 hours in advance of party. I was worried that might have been too far in advance...but it was excellent. Many comments and questions on the recipe. For the Italian dressing I used the 'good seasons' dressing packet mix. To keep Italian dressing from separating, I first whirled dressing for a couple of seconds in blender prior to pouring over beans. I used the trades joe's frozen fire roasted corn, as was previously suggested. The fire roasted flavor was great addition. (someone even asked me how I had roasted the corn) I served this as an appetizer with Tostitos white corn chip scoops. I was planning to serve with Fritos scoops, but when I sampled it with the Fritos, it really overpowered it and made it taste 'off'. Luckily I had time to send my son to the store to pick up other chips :) The tostitos scoops are lighter and seemed to play better with the marinade. It says serving size of 8, but as an appetizer it serves more like 20. I've had similar appetizers, but this one is a great recipe. Thanks!

Marinated Beet Salad
Very good/easy. I made approx 30 hours in advance of my party. Trippled the recipe, Used the canned beets that were already Julian cut. Received many compliments, didn't have any left-overs.
