Oven-Roasted Asparagus

My husband rated this a 10 and said it was restaurant quality! My only complaint was that I felt there was too much oil. It began to smoke a little in the oven and I took the baking tray out partway through and wiped quite a lot of oil off the tray. Next time I'll use about 1TB total. Unlike others, I didn't feel it was too salty. I did use all optional ingredients. Great recipe!

Pecan Rice

As written, I felt this recipe was subpar. Although it smelled wonderful, it turned out bland and on the dry side. I added some half and half and a lot more ginger, basil, pepper and salt and the result was quite delicious. I will continue to make a tweaked version of this recipe. Kudos for the general idea.

Grandma's Baking Powder Biscuits

Great recipe! The biscuits are super easy to make and turned out golden and fluffy! I used butter-flavored shortening. I love the light hint of sweetness (cornbread-esque) and the light crunch on the outside with very tender middle. My hubby is not a bread fan but rated it 9 out of 10 (in 12 years of marriage, I've only seen him rate a food item a 10 twice). Thanks for sharing!

Chewy Chocolate Chip Oatmeal Cookies

Great recipe and I actually loved the saltiness of it! Usually oatmeal cookies are too sweet for me. These were very good and buttery. In place of walnuts and chocolate chips I added 2 cups raisins. My dad and hubby kept raving and mom was impressed with how quick they were to make. Definitely a keeper!

Tofu Parmigiana

I love tofu and will even eat it raw so I was excited to try this. Since the bread crumbs didn't stick to the tofu, I just layered it in the dish and it turned out fine. Both hubby and I enjoyed it.

Hearty Vegetable Lasagna

My husband and I are both vegetarians from childhood. He liked this recipe but I don't think I've found my go-to recipe. I felt it was a little bland, not enough cheese mixture or flavor in general. I used about half the recommended noodles and with that, it fit just fine. Looked beautiful but was soupy when cut. My biggest complaint about most vegetarian recipes is that they are bland, use weird ingredients or are complicated. My non-veggie friends would not like or use this recipe. Overall this wasn't bad but I'm still searching for my crowd-pleaser lasagna.

Fresh Rhubarb Pie

Superb recipe! So quick and easy to make! My husband and I ate it hot out of the oven with vanilla ice cream. Was great cold too! Delicious flavor from our fresh, organically grown rhubarb. Held its shape beautifully! Definitely a keeper.

Pecan Pie V

Not impressed. I made the recipe exactly as written. Turned out too dry, didn't fill a normal-size pie crust and the texture/taste was average to blah. Both sides of my family are major pie people. I make pies for every special occasion and I really pay attention to the reviews from the family. Nobody commented at all about the pecan pie at Thanksgiving this year which means nobody liked it. I'm glad so many people enjoyed this recipe but I won't be making it again.

Pumpkin Ginger Cupcakes

Excellent recipe. I followed the recipe exactly. It was easy to make and turned out beautifully. I used organic crystallized ginger and topped with simple, cream cheese frosting. It made 2 dozen cupcakes which is too much for my husband and I. We gave the rest to our neighbors - they were delighted.

Apple Pie by Grandma Ople

I made this recipe exactly as written so I am reviewing it as written. I can't say I was disappointed because, based on all the changes nearly every cook made to the recipe, I didn't believe the original recipe was worth the hype. I was intrigued by the lack of spices and the idea of the recipe. It is definitely worth full stars for potential and flavor but the execution needs help - as everyone else has discovered. It turned out runny, the apples were undercooked and my husband couldn't even finish a piece. That said, when I make the changes/additions that everyone else makes, I'm sure it will be delicious.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

I was disappointed in this recipe. I followed the recipe exactly. The lentils didn't cook thoroughly, there ended up being too much sweet potato, not enough flavoring and it was overall just disappointed. If I were to repeat the recipe, which I won't, I would suggest medium, rather than large potatoes, longer cook time and more seasoning.

Mom's Zucchini Bread

There's a reason this recipe is rated so highly! Used organic, home-grown zucchini from my husband's garden. Since he doesn't like nuts, I exchanged semi-sweet chocolate chips. Turned out exceptionally well. I took some to my co-workers and both loaves were scarfed down in a matter of a couple of hours.

Apple Crisp II

This is a superb recipe! Simple to make and tastes delicious! I used Golden Delicious apples with a sprinkle of lemon juice over them. Doubled the amount of cinnamon. Otherwise no changes to recipe. Fed to my husband and Dad - both said it was by far the best crisp they've ever have. Great job!

Hot Apple Cider

Made for Christmas last year. Brewed in a crockpot all afternoon. It was sweet, spicy and delicious! If it were thickened slightly, it would make an excellent pancake syrup.

Vegetarian Chili

I found this recipe neither bad nor particularly good. Due to the canned beans, the texture was too mealy and chewy although the flavor was good. I wouldn't repeat this one.

Stuffed Cabbage Rolls

Overall, an easy, delicious recipe that translates to vegetarian very well. Rated 4 stars because, as others mentioned, it's a bit bland. I used Morningstar Farms Griller crumbles and marinara sauce in place of the soup. Baked in a lidded casserole dish at 375 for 45 minutes. After removing the lid, I topped the dish with mozzarella cheese and broiled to brown. I will definitely repeat this recipe with a few tweaks.

Veggie Cheese Casserole

I would rate this 5 stars for potential! With a couple changes, both my husband and I loved it and it was quite easy to make. I used fresh broccoli instead of frozen. I used two full crowns excluding the thickest stems. I baked the casserole for 45 minutes total. No other changes to the recipe other than to sprinkle individual servings with Lawry's Seasoned Salt for added flavor. The topping turned out delicate, soft but definitely cooked through.

Basic Flaky Pie Crust

This is a no-fail pie crust and the only one I use now. It bakes up beautifully, is easy to work worth and tastes delicious and flaky. I've received numerous compliments on both appearance and taste.
