Pear Bread II

Amazing. I had some hard pears given to me and didn't know what to do with them so I made them into muffins. Great in the morning with a cup of coffee. Big hit in my home. Will keep them as a fav.

Cuban Ropa Vieja

fantastic! I have made this again and again. Some changes I've had to make: add more garlic for a deeper flavor and more tomato sauce when serving over white rice. My meat never falls apart like supposed to, so an hour before done, I pull it out and shredd it myself, then put it back in the crockpot. Yum Yum!

Country Breakfast Casserole

Very yummy. Had to make changes based on what I had. Here's what I did: Used diced hot dog buns toasted in oven. Used for bottom layer. Then strained left over sausage gravy to separate. Layered sausage (about 1.5 cups) then cheese. Whisked 8 eggs then added to 2 cups of gravy. Poured on top of casserole. Added more cheese. Browned hash browns in oven. Baked casserole at 400 for 40 minutes (or until almost firm) then toped with crispy hash browns and finished baking. Very similar to original recipe but made changes based on others reviews and my inventory :). Yum.

Sweet Russian Cabbage Soup

I scrambled and drained the fat from the ground beef, then added to soup. Was very tasty. My husband was pleasantly surprised. He was not excited when he heard it was for dinner, but had seconds and ate left overs for lunch next day. I will make it again.

Easy Punch

Yummy! Seemed like it would be too watery, so Used half the water, and used the soda for the other half. Used frozen strawberries as ice cubes and was a big hit. Looked pretty too.

Easy Ham and Swiss Casserole

Tastes great and a true "comfort food" Rated 4 instead of 5 beause I made adjustments based on what I had in the house. 1st - I precooked the noodles to cut on time while I sauted onions and reheated the cubed ham in a skillet (salt pepper etc). 2nd - added frozen peas to give some nutrition. 3rd - used mont. jack cheese instead of swiss, thats all I had. 4th - Used italian bread crumbs, again all I had. Skipped the wine and milk, didn't need it. Baked at 350 for 20 min to let flavors blend. YUMM!! A great meal with basic ingredients.

Hamburger Skillet Supper

Pumpkin Stew

It would have been a five but I had thicken it up with cornstarch and add some extra spices. I did not cook in pumpkin. I chunked raw pumpkin and added to stew when I added the potatoes. Next time I might try and mash cooked pumpkin into broth mixture to thicken adding more flavor.

Fruit 'n' Spinach Salad

Did recipe exact and was Not impressed with dressing. The ginger was a bit strong, so I added a bit to make it the three stars, otherwise would have been a 1 star. Added garlic and onion powder and a bit of red wine vinegar. Won't be doing it again.

Roasted Curried Chicken with Couscous

thought Ckn was ok. made for a group of 40+ people. Followed directions completely except used skinless breasts. and slow cooked. Had way too much mixture left over and curry taste was so weak. Dont think I will be making it again. Too much work with not enough bang.

Chili Dog Casserole I
