Split Pea and Ham Soup I
While unfair to rate something while significantly altering, my husband raved over this soup after some modifications. Yet that shows the greatness of this recipe: it's a fabulous basic recipe! My additions were as suggested by the "Split pea soup" article here on Allrecipes: - added more ham, a bay leaf, & ~1/2 tsp nutmeg to the pot initially with extra water too (covering about 1 1/2 inches above the ingredients in my pot). I omitted salt due to the ham - Only added 2/3 lb initially and saved 1/3 lb of split peas until 30 minutes until the end. I also cooked the soup a total of 1.25 hours, which left a smooth base with some texture - I added 2 Tbsp lemon juice and 1/3 c whole milk at the end for extra flavor and creaminess (no the milk didn't curdle :) ) All I can say is YUM! With the nutmeg and lemon, it has a great taste that is different than a lot of other "ham & bean" type soups that we tend to make a lot in our house.

Creamy Dill Cucumber Toasties
Went over great! A few touches that were a succes: 1) Only use 1/2 packet of italian dressing mix 2) Add 2 tsp dill weed to the cream cheese mixture AND sprinkle some on top 3) Let the cream cheese mixture sit for at least a couple of hours to let the flavors mix 4) Slice the cucumber very thin and then slit 1/2 the diameter. That way you can twist the slices to make a pretty presentation. (I used 1.5 cucumbers total.) 5) Slice the baguette into 1/4" slices. (I didn't toast and I'm glad with how the final product tunrned out.) I used a mini French baguette which was nice. I also used Neufchatel cheese and reduced fat mayo which worked great -- no one missed the extra fat!

Rhubarb Dream Bars
These were great and got asked repeatedly for the recipe! I halved the ingredients though and still made them in a 13x9 pan. They were thin but not too rich this way. Also, I mixed 1/2 c oats + 2 Tbsp melted butter + 2 Tbsp brown sugar and sprinkled this on top before baking. I had to bake them a little longer, but it was worth it! The topping made the overall presentation better, and they were a huge success!
