Cake Balls

These are good with a few changes. Only use 1/2 to 3/4 of the container of frosting. After rolling into balls, FREEZE them overnight. This will make dipping them much easier. Also, I use candy melts rather than an almond bark or something like that.

Chinese Chicken Fried Rice I

This was excellent! I used brown rice to make it healthier and with all the veggies and seasoning, you can't even tell. It made enough for my family of 4 plus leftovers for lunch.

Libby's® Pumpkin Roll with Cream Cheese Filling

This recipe is easier than you think it will be. The cake is so moist and the filling is not too sweet. I made my first at Thanksgiving, and have already gotten requests to bring it to Christmas Day dinner!

Chex® Pumpkin Pie Crunch

This is so addicting! I used a cup extra of the Cinnamon Chex and cut back on a different cereal. Also, I don't care for nuts, so I added butter pretzels instead.

Slow Cooker Chicken and Dumplings

I love making this for my family. It's so easy! You just have to make sure your biscuits are cooked through...they may not look like it because they're in the liquid, but just check the inside. Also, at the end, I like to stir in frozen mixed vegetables to give my family some extra nutrition!

Turkey Brine

This is the first time I have brined a turkey so I was a little nervous about it. But it turned out excellent! The meat was so moist and it literally just fell off the turkey! I didn't have enough fridge space, so I put the brine in a clean garbage bag inside of a cooler and put it in my garage for the night (we live in ND!). I had to turn the turkey about half way thru the night to brine the other side. After rinsing in the morning, all I did was slather it with butter and pepper. It was great and got rave reviews! Will definitely do every year!

Black Chocolate Cake

This cake is awesome! Instead of the water I use all coffee. You can't taste the coffee. It just brings out the richness of the chocolate. I usually poke holes in the top of this, pour caramel/butterscotch topping over the top, sprinkle with toffee and cover with whipped cream. Divine!!

Chocolate Chip Cheese Ball

This cheese ball is such a hit everytime I make it. I don't use any pecans...I just roll it in mini choc. chips. People love it with regular or chocolate graham sticks.
