About this Cook
Total hippie Dead-Head, used to be vegetarian and not enjoy cooking... Now I am Mama and I cook OFTEN! The meals are 99% of the time, delicious. I cook healthy, and try not to eat meat with every meal. I RARELY cook beef. I just recently started enjoying making entire meals from scratch. My family and music and spirituality are the most important things to me. I'm also a musician, and blossoming in that area and enjoying every second of it. I love to dance at concerts. I love to hang out in nature. I adore my 2 sons.
My favorite things to cook
Many different chicken dishes; tofu dishes; pasta; replacing ground beef with ground turkey; I love crock-pot meals. I like making my own marinades and seasonings from scratch. I hate baking dessert dishes though! Pies, cookies, cakes, not for me!
My favorite family cooking traditions
My mom makes a lot of very traditional, homestyle meals, like fried chicken, casseroles, etc. She learned from her mom, my grandmother, Nonny. The recipes make boring sounding meals taste so yummy. The difficulty in following their recipes varies, so you can choose one depending on how much time you have that night. I hate baking, and the rest of my family LOVES TO BAKE!
My cooking triumphs
I created a recipe for "Southwestern Chicken Soup" that is so tasty... My Mama's best friend included my recipe in a special family recipe book, that she made for her daughter for her graduation. I'm also proud to have learned how to cook from scratch.
My cooking tragedies
Not too many, just overcooking things until they became dry, adding a bit too much or too little of this seasoning or that one. Also, working really hard and confidently on a time-consuming recipe, and it's not so great; I hate that! I work hard (stay-at-home mom) so my time is valuable! But I can't think of any blowing up the kitchen stories or anything, at least not yet :)

Authentic Louisiana Red Beans and Rice
I'm a vegetarian, so I left out the sausage. I was worried it would lose so much flavor because of this, but it didn't! I just used a little extra seasoning and added a little tobasco sauce, and it was so yummy! Thanks!

Lemon Cream Pasta with Chicken
So yummy! I use whatever pasta I have on hand and it always tastes great! Secret's in the sauce, which is so simple but so darn good.
