Ellen's Addictive Guacamole

Made this last night for a party and everyone LOVED it. The only difference that I made was substituting lime juice for lemon, because I had limes on hand and no fresh lemons. I also would recommend keeping the pits in the bowl until it's time to serve so that it doesn't brown!

Mini Pumpkin Whoopie Pies

I made these a few years ago for Thanksgiving and my family raved about them, so for a Halloween party, I said that I would attempt this recipe again. I did use vegan butter instead of regular butter (and wasn't exactly precise in my measurements), used a mixture of raw and organic sugar, and didn't have ground ginger on hand, so I used pumpkin pie spice instead. They came out beautifully! I cooked them until the edges were browned slightly, let them cool for a good 30 minutes, and then made them into little sandwiches. They were a huge hit and I'm already planning on making them again for Thanksgiving! A+ recipe and very easy to make.

Chicken Tortilla Soup I

Delicious! I made it 100% organic with the exception of the hominy. I originally was considering doing rice or quinoa instead of hominy, but the woman at Whole Foods insisted that not using hominy would severely alter the consistency! I did use diced tomatoes instead of crushed, and used flax tortilla chips. Yummmm!

French Apple Tart (Tarte de Pommes a la Normande)

This was amazing! My extremely picky brother devoured two pieces, and I already had requests to make it for Thanksgiving! Used 1/4 tsp. almond extract in lieu of almonds (since I found out as I was baking that we were out of almonds!), and while it probably didn't taste as good as with the real almonds, but having never made this before, we all thought it was lovely! (And it definitely had an almond-y taste to it!).

Best Ever Jalapeno Poppers

Absolutely perfect! I used the "Mexican Cheese" blend from the grocery store, used skim milk, and light cream cheese for it to be slightly healthier! I also baked them in the oven for 15 minutes at 350 degrees F - I sprayed the bottom of a dish with a little butter, and melted butter in the microwave, then painted a few dots on to each popper. Delicious! :) The bacon flavor was excellent and not too overpowering!

Fruit Pizza

This was the perfect and unique dessert for my father's birthday! It was SO easy to make, and to make it slightly healthier, I used low-fat cream cheese instead of regular. I also melted dark chocolate chips and skim milk in a saucepan and added that on the bottom layer before the marshmallow creme/cream cheese mixture!
