Ellen's Addictive Guacamole
Made this last night for a party and everyone LOVED it. The only difference that I made was substituting lime juice for lemon, because I had limes on hand and no fresh lemons. I also would recommend keeping the pits in the bowl until it's time to serve so that it doesn't brown!

Chicken Tortilla Soup I
Delicious! I made it 100% organic with the exception of the hominy. I originally was considering doing rice or quinoa instead of hominy, but the woman at Whole Foods insisted that not using hominy would severely alter the consistency! I did use diced tomatoes instead of crushed, and used flax tortilla chips. Yummmm!

French Apple Tart (Tarte de Pommes a la Normande)
This was amazing! My extremely picky brother devoured two pieces, and I already had requests to make it for Thanksgiving! Used 1/4 tsp. almond extract in lieu of almonds (since I found out as I was baking that we were out of almonds!), and while it probably didn't taste as good as with the real almonds, but having never made this before, we all thought it was lovely! (And it definitely had an almond-y taste to it!).
