Hash Brown Casserole II

Wow! We hosted a buffet for 24 people and needed an easy but good potato casserole. This will become a regular for my holiday and special events menus. I made three pans of this and had to scrape the sides to get a little bit for myself - people raved and ate and ate. The only changes I made were to leave out the butter and I used low-fat sour cream with chives. I had to improvise for the topping since I was sure I had corn flakes (nope) or Durkee's onions (nope again). I sauteed some Italian bread crumbs in about 2 tablespoons of butter and it turned out great. DH said it was better than Cracker Barrel's potato casserole - great praise, indeed. Thanks for the wonderful recipe.

Poppy Seed Bundt Cake II

Where are 6 stars when you need them? This cake is delicious - moist and wonderful flavor. I followed the recipe to a T and couldn't be more pleased. I did a lemon glaze and drizzled it over the warm cake. Really impressed the family - thanks for this keeper!

Crusty Potato Bread

DH's seal of approval - he said to me, "Don't make this often" as he stuffed the third piece in his mouth! We devoured the entire large loaf in a day and a half. It was very light - not dense like so many bread machine loaves turn out. It rose so high that it almost touched the top of my machine. I followed others' recommendations by cutting the flour to 3 cups, upped the potato flakes to 3/4 cup (used the flavored ones, yum) and increased the water to a cup and a half. Wonderful bread!

Overnight Casserole

I have made this casserole for over 25 years and my family adores it. The only thing different I do is use elbow macaroni, add about 1/4 cup minced onion, 1 minced garlic or to taste and omit the eggs. For those who find it too soupy, bake it covered for the first half hour and remove the cover for the last half hour of baking. Let it rest for at least 10 minutes before serving. This is probably my most shared recipe since I've taken it to lots of carry-ins. Depending on how many I have for dinner, I often double the recipe and LOVE the leftovers. My husband hates it warmed up so, good - more for me!

Casserole in the Cooker

Love this casserole! Used the leftover Thanksgiving ham, cream of celery (it was all I had) and 2 cups of shredded sharp cheddar cheese instead of the processed cheese spread. Everyone raved about it and now think I'm the kitchen goddess of leftovers. Thanks, Krista.

Slow Cooker Homemade Beans

I made these for a group of high schoolers, all guys, and not one of them would eat them. Even these teens found them sickening sweet. I took a bite after the kids refused to eat the beans and I felt as if I was going into an instant sugar coma. If you try this recipe, cut way back on the brown sugar and perhaps the molasses could be cut to 2 tablespoons. Ended up throwing the entire pot out, hubbie wouldn't even taste them.

Slow Cooker Tamale Pie

Giving this 5 stars because it's such a great idea but, believe me, we're the mild family, nothing hot and spicy - this was truly bland. I even added half a bottle of salsa and some chili powder to the mixture and it was fairly tasteless, I think the way to spice it up will be to add a packet of taco seasoning to the browned beef and simmer a bit. I will also add a whole bottle of salsa and more than a bit of chili powder. However, the corn bread rocked! I was a bit worried if the corn bread would get done, be gooey or hard as a rock. It was perfect and I really believe with some tweaking this recipe will become one of our favorites.

Grandpa's Classic Coney Sauce

Fantastic CONEY SAUCE ! Please don't give this recipe a bad review because it isn't chili sauce - read the title first, the word "chili" does not appear in it. Being a kid of the late 50's and 60's, this is absolutely like the Coney Sauce that we loved on the footlongs from our little Mom and Pop diner/drive-in. Make sure you slow cook this for hours either in the crock pot or at low heat on the stove top or tightly coverd in a 250 degree oven. I cut the sugar to a tablespoon and a half since I used honey mustard. Thanks for a trip down Memory Lane!

Potato Soup Mix

This soup mix rocks! I have a widowed sister-in-law who always requests a BIG jar or tub of this mix for her birthday and Christmas. I keep some for a fast, easy lunch and if I want to "fancy" it up a bit, I add some grated cheese, bacon bits, sliced green onions, and sometimes a tablespoon or so of sour cream. My SIL makes it for dinner at least once a week with a green salad and fruit. Says it keeps her sane when cooking for one! Thank you for sharing this recipe, we have made it often.

Creamed Chicken for Biscuits

This is my "go-to" recipe for leftover chicken and turkey. It is so refreshing not to use canned cream soup and I always have the ingredients on hand. I use skim milk since that's all we use and omit the almonds and peas since not all of the family will eat them. I serve this with peas as a side dish and usually steamed broccoli. If you want a really decadent, starchy meal, try this over left-over mashed potatoes. Heavenly! Absolutely my favorite way but I'm trying to cut down on it. Thanks for the great recipe.

Parmesan Baked Potatoes

These were marvelous - the family suggested I give them 10 stars! Based on some other reviews, I added garlic and onion powder to the butter and cheese mix. I then baked at 350 for 60 minutes since I was also baking oven-fried chicken. We will definitely have these again. Thanks for the recipe.

Easy and Delicious Chicken

I love this recipe. The only thing I changed was to add the whole can of chicken broth so there was even more of that yummy sauce! What a joy to come home after work and have dinner mostly made. Even DH, who is a bit picky, called dibs on the little bit of leftovers for his lunch next day. Thanks for the great recipe.

Quick and Super Easy Chicken and Dumplings

Fantastic! For such an easy dish, it was excellent. I boiled my own chicken breasts, added some frozen mixed veggies and used Bisquick Heart Smart mix. I had hoped fpr leftovers, but my adult children showed up (conveniently at supper time!) and devoured this. Thank you for a simple, great meal.

Slow Cooker Beef Vegetable Soup

Yummy! I've made this twice now and the first time I did all canned vegs except for using raw potatoes. At the end of 8 hours on low, the potatoes were still a little tough. The second time I made this, I microwaved 2 medium potatoes in some water for 5 minutes before adding to the crockpot. Perfect! This is wonderful on a chilly Fall night with some homemade bread. *****Gotta a change- Youngest daughter wasn't crazy about the broth with tomatoes in it so I now omit them and add 1 can of beef broth. I miss the tomatoes, but it's still excellent without them.

Chicken with Stuffing

Comfort food at it's finest! My DH is not very fond of stuffing (good - more for the rest of us!) but he loves the chicken in gravy. I just love the whole casserole and how very, very easy it is to make. Sometimes I season my chix with garlic powder, black pepper, onion powder and a dash of poultry seasoning and sometimes I don't. I have doubled and even tripled this and it always pleases. Thanks for a regular at our home!

Bread Pudding III

Fantastic! I used all raisin bread since that was the only white bread I had and cut the sugar down to about 1/3 cup because raisin bread is so sweet. My husband thinks I'm a master chef, now! Thanks for the recipe, I'll use this often.
