Slow Cooker Apple Crisp

This is super sweet. GOOD...but not GREAT. I used a combo of apples...green & red and served it with vanilla frozen yogurt & Carmel sauce. I will make this again and hopefully it will turn out a little better.

Slow Cooker Mashed Potatoes

The best mashed potato's I have ever had! I make this every Thanksgiving - using the crockpot frees up my oven for the turkey & sweet potato's. I make this every year & have experimented a little with this recipe...I found the BEST combo is using flavored cream cheese...I use veggie cream cheese & chive. I use the light versions of cream cheese & sour cream BUT I add in some extra real butter. I also leave some of the skin on the red potato's. This is so delicious.

Slow-Cooked Broccoli

Big hit with the family, I make this every thanksgiving & double the recipe. I substitute the crackers for croutons (as suggested by others) & use a can of broccoli cheddar soup &/or chicken soup. I also use part cheddar cheese/part Velveeta cheese...and add in some garlic. I think the Velveeta really adds to the yumminess of this recipe. Love using the crockpot for this thanksgiving side dish....I make it late morning, cook on high a few hours & then turn it to low heat. I love that it frees up the oven for my turkey & sweet potato's.

Kelsey's Favorite Stuffed Green Peppers

Great recipe. I like to blanch the peppers beforehand in boiling water for about 15-20 minutes. I make this healthier by using quinoa instead of white rice, ground turkey OR lean meat, & spaghetti sauce (Dei Fratelli). I also use fresh garlic and add cooked red/orange peppers to the rice/meat/sauce mixture for extra veggies. I top the green peppers with tomato paste or sauce. I make a big batch of the rice/meat/sauce mixture so after filling the peppers I put the leftover mixture around the peppers & bake. voilà!

Honey Mustard Grilled Chicken

This is one of my favorite chicken recipes....I always make extra sauce for dipping....it is sooooo good! I have grilled this & also baked this...taste great both ways...I make this chicken recipe often...usually pair it with a baked potato because the sauce tastes great with potato too! Husband loves it so its a keeper.

Beef Stew VI

My husband loves this beef stew...great for a cold winter day :) I used low sodium beef broth & throw in a little bit of red wine, double the potatoes & carrots. Easy & delicious!

Puppy Chow

Yummy puppy chow....used dark chocolate for this recipe....next time I will use a little less peanut butter because I think it overpowered the chocolate. I also used a little less powdered sugar because OMG is this sweet! I used a mix of vanilla and chocolate chex mix for this.

Slow Cooker Mongolian Beef

My husband & I love this meal....i add the onions in at the last hour or so of cooking so they are not too soft or mushy. I also double the amount of green onions & make a little extra sauce. We enjoy this with wheat noodles.quick, easy, delicious dinner.

Slow-Cooker Chicken Tortilla Soup

Delicious!! My husband asked me to make this again & again....I think adding the black beans will make this a 5 star recipe....I will try that and maybe add some brown rice too. I did add extra tomatos (stewed) and used chicken broth in place of the water. Topped off with avocado, mexican cheese and greek yogurt instead of sour cream to make it healthier. Easy & perfect for a cold day! UPDATE! 5 STAR RECIPE because I added 1-2 cans of black beans & it really makes this recipe even better. I have made this several times now...added some cayenne pepper to spice it up even more...yum.
