Clone of a Cinnabon

Oh my God!!! These are amazing!! Made them for Christmas morning. What a treat, as they turned out absolutely perfect. I followed the recipe exactly and put the ingredients in the bread maker Christmas Eve before going to bed. I set the timer so it would be done kneading and rising by 7am. When I woke up I went right to step 2 which the kids helped with. That's the fun part, rolling and cutting the dough! The icing is just right with the perfect amount of cream cheese. I am always watching my weight but I didn't cut back on any of the ingredients. I did not want to mess with perfection and it paid off! I added a few pecans to one side of the pan so we had 4 with nuts and the rest without. Just make sure to under cook them a little. If the tops turn golden brown, chances are the bottoms (which will be the new tops) will be too well done. At least that's how my family likes them, a little more undercooked than overlooked.

Homemade Black Bean Veggie Burgers

Excellent recipe, and I hate to be redundant, but really is better than the frozen. Was too mushy, but as my husband said, it was like a burrito filling. "Fried" on top of stove in cast iron skillet with very little oil. Will add more filler next time (flax? oatmeal? brown rice?). Added frozen roasted corn kernels (Trader Joe's, I keep a bag in the freezer). Served with an amazing spread we made up with mayo, sour cream, and oven-dried crushed jalapenos from our bumper crop. When we had zillions of jalapenos, we dehydrated them in the oven then ran them through the food processor. Nice heat when we need it. Burger recipe definitely a keeper!

Egg-Free Low-Fat Oatmeal Cookies

Well...more like a muffin top (like a Vita-muffin) than a cookie. I used cranberries which was nice, added flax, half cup whole wheat flour, nutmeg, and cloves. Not bad as a mid-morning snack to take to work but not a real cookie treat. On another note, my husband couldn't stop eating them...go figure.

Mom's Buttermilk Pancakes

great and super-easy!! I added 1 - 2 tsp of sugar and equal amounts of flax meal lol so the fiber could justify the sugar in my own mind. Family loved them.

Honey Nut Granola

I make this ALL the time...as soon as I run out I'm back at the store stocking up on supplies to make more. After baking, I add cranberries, golden raisins, coconut, chopped dried apricot...whatever I have. It's just so delicious. I gave away tins of it at Christmas.

Awesome Ham Pasta Salad

Not bad, but I don't think I'd make it again. I could see it being a hit at a party, but definitely isn't a dinner salad. I liked it, but the leftovers in the fridge were tell-tale signs that the family had enough. The sweetness of the pickles with the fresh garlic was the problem. If I did make it again I'd leave out the garlic. It was very pretty, though!
