Personal Portobello Pizza

We make these regularly now! So yummy. I usually lightly coat the top with italian dressing and bake for a few minutes cap sideup to soften and get some juice out. I then lightly press a bit more juice out. Then we top and finish baking. doing this we have not had any that were too wet or slick.

Pineapple Stuffing

This was fantastic. We only used 1/2 the sugar and it was plenty sweet for us. I could see using this as a light dessert too.

Caper Baked Chicken

Simple and surprisingly delicious. We really enjoyed this. I served it over whole wheat pasta instead of rice. I only coked the chicken about 15 minutes, which was almost too long. My guess is reviewers with "dry" chicken simply over-baked. We always start checking a new recipe at about 1/2 the time listed to make sure we are accounting for how thick our cuts are and our oven temp.

Bacon-y Bok Choy

We really enjoyed this dish. I added thinly sliced radish too for a bit more color. I only had bok choy on hand, but it turned out great. I cooked the stalks and radish for a few minutes before adding the leaves.

Asparagus with Pecans and Parm

This was very easy to make and very filling! We ate this as a main dish and did not snack before bed. I used minced garlic instead of garlic powder. This will be a regular at our house!
