Sugar Cookie Icing

I am so impressed with this sugar cookie icing recipe. It was very easy to make and deal with, and it does dry nice and hard so you can stack them easily, but the icing is not hard enough to crunch when you bit into it. It is solid and smooth and just delicious. I took the advice of another reviewer and allowed the icing to set for several hours (overnight) before I stacked them, and they were perfect. Thanks for the recipe!

Pepperoni Rolls

These bring back memories! I love pepperoni rolls, and we always had them as a kid (grew up in the MOV). This is a delicious recipe and will be a keeper. The only things I changed were reducing the sugar to half, adding a little mozzarella cheese and using vegetarian pepperoni. These came out great. I also did the egg wash and sprinkled garlic salt and italian seasoning like others suggested, although the pepperoni rolls we had growing up didn't have any fancy egg wash! :)

Pineapple Upside-Down Cake V

This cake is great. I never would have thought to layer an upside down cake, but it works well and looks very pretty. My only addition was to add chopped pecans to the layer with the brown sugar and crushed pineapple (the bottom layer). The top layer cracked a bit like some others have posted. Next time I'll try to be more gentle with the top. I put the pan back on after layering like someone else suggested, and that worked well. Thanks for this idea!

Banana Sour Cream Bread

I got so many compliments on this bread! This is a great recipe. I ran out of white flour and used wheat (about 1 1/2c. wheat and 3 c. white) and I also ran out of white sugar (used 2 c. white sugar and 1 c. brown). I also greased the pans with butter and coated them with flax seeds and then put the batter in the pans, a trick I learned on allrecipes in another recipe, and did not put the extra sugar/cinnamon on top. This bread is excellent and is really moist because of the sour cream. Definitely a do-over!

Spanish Potato Omelet

This turned out really great and was easy to make. Someone mentioned turning the omelet by flipping it over onto a plate- that was great advice and worked really well. I will definietly make this again.

Pina Colada Sorbet

Very refreshing! The only thing I did differently was put in 3/4 cup sugar instead of the amount in the recipe because of the one comment about it being very sweet. It came out deliciously tart with a little sweetness and is great on a hot summer day! Will definitely make again!

Best Chocolate Chip Cookies

These cookies are so amazing. I've gotten compliments every time I've made these. I like to substitute half the chocolate chips with M&M's, but otherwise I wouldn't change a thing!

Lemon Zucchini Bread

So many great reviews! But I was truly disappointed. I should have substituted something different for the oil. The texture of the bread was just not nice, and the taste was just kind of bland. I followed the recipe exactly. I know there were many reviews that included changes, but I don't think this basic recipe is worth trying with alterations. I will try another recipe next time.

Pineapple Enchiladas

This recipe is great. I think the whole can of pineapple is a bit much, but I guess that depends on your taste. I added one can of black beans to the stuffing and put black olives and jalapenos on top a the picure shows. I will definitely make these again. My family loved them, but I'll add a little less pineapple next time!
