Buffalo Chicken Dip

Reviewed: Jan. 29, 2011
I've made this three times now and every time it flies out of the bowl! It is really a great dish! To make it easier I use a rotisserie chicken from the prepared foods section at the grocery store. Whenever I show up to a party without it I get asked why I didn't bring it!

Grandma Flo's Shipwreck

Reviewed: Aug. 31, 2010
This was good! I was a little leery at first, but it was very good. I thought I had kidney beans but of course I didnt, so I used corn...figured they were close LOL! Anyway, it was very good. My husband calls it "Chili with potatoes". 2 of his favorite things. I also topped with cheddar cheese and baked an additional 15 minutes so it would brown nicely. This was a nice change for the ground beef blues!

Famous Chicken Adobo

Reviewed: Aug. 31, 2010
This was great! My husband loved it! I added a cup of water and a teaspoon of sugar because I was afraid it would be too salty (as mentioned in some reviews) but it was really good. He deemed it "Make againable". This was a nice change to boring chicken. And it was so easy! Thanks for sharing!

Creamy Chicken and Rice

Reviewed: Aug. 28, 2010
This was good. My husband really liked it. I took some of the ideas everyone posted to spice it up a little, but I didn't change too much. I added Chicken Base to the rice and used the base instead of the bouillon for the cheese sauce. Also instead of crackers I topped with cheddar and mozzarella cheese just because I'm not a fan of the cracker topping. The cheese got nice and golden and really worked with the recipe. My husband said it reminded him of Mac & Cheese, which is a good thing! I think that the next time I make this I will add some broccoli but other than that I thought it didn't really need anything else! Thanks for sharing the recipe!

Cheesy Ranch Potato Bake

Reviewed: Jul. 8, 2010
Wonderful! Very easy to make and delish! The kitchen smelled wonderful and I could barely wait to dig in! I didn't use any butter in this recipe, just spray and it turned out fine. The ranch dressing gave such a bold flavor that I didn't add the bacon that I cooked to add in - it really didn't need it. I will definitely make this again. Maybe next time to save a little time I will make this with tater tots instead of fresh potatoes. Either way it was yummy! I will be making this part of my normal rotation to spice up my side dishes -thanks!

Pancakes I

Reviewed: Jul. 4, 2010
Excellent! This really saved me when my "box" mix failed. Serves me right for trying to take a short cut. This was so easy and it made the best pancakes! I added a dash of vanilla, but other than that I made no changes to the existing recipe and the kids and hubby were begging for more. Thanks for sharing - this was a real breakfast saver!

Hot Fudge Ice Cream Bar Dessert

Reviewed: Jul. 4, 2010
This was wonderful! I could have used a few more ice cream bars (maybe 23 instead of 19) to fill the 9 x 13 pan completely (my ice cream bars were a little thin), but other than that this recipe was easy to do and it was gobbled up by everyone! Make sure you have a cake carrier to transport it in because if you use foil the fudge might stick to it (it happened to me) but it was easy to fix. It was a great treat on a hot day and it held up really well! Thanks!

Chocolate Pie I

Reviewed: Jul. 4, 2010
I've never made anything like this before so I was really nervous. Unfortunately we weren't able to eat the end result. The filling was so runny! I wish I had read further down in the reviews about it taking about 30 minutes to thicken. I was so afraid of cooking it too long and having it burn so I'm sure I didn't cook it long enough. I also had to double the recipe for the meringue, which was the only part that turned out right. I let it sit in the fridge for about 4 hours hoping it would set and it never did. I may try adding corn starch to the chocolate also as some one else suggested. I wouldn't recommend this for a first timer, but I will try it again when I'm not under holiday pressure! ***I tried this again on 7/11/10 with no time constraints. I also used the "Double Boil" method. After an hour and a half of stirring I decided to add corn starch. 2 tablespoons later it was no thicker. Then I decided to add Gelatin to it. Nothing. I don't know what I'm missing but I can't get this right! The meringue however was beautiful!

Baked Potato Soup

Reviewed: Jun. 25, 2010
This was really great! My husband absolutely loved it. I've never made anything like this before and it was pretty simple for the most part. I used sour cream in addition to the half & half and omitted the hot sauce because I don't like spicy and served it with cheddar bay biscuits and it was so great! 5+ stars! I just made it last night and have been asked to make it again!
