Delightful Indian Coconut Vegetarian Curry in the Slow Cooker

This one wasn't bad. Took off a star just because it took about twice as long to cook as the recipe stated. Made for some vegetarian friends the other night and was a big hit. Will probably make again.

Pumpkin Chocolate Chip Cookies III

OMG, made these several times in the last 6 months and have never been disappointed. Originally made the recipe to use up extra pumpkin puree, now I make them just to have them. Never tried them with walnuts since the people I share them with have allergies, but they are excellent without them.

I've made these for several occasions now, and they always seem to be a big hit. Easy to make, and the only negative thing I've heard about them is that they disappear too quickly.

Slow Cooker Chicken Creole

Love this recipe. I did use thighs since that's what I had and I forgot to add the mushrooms. Other than that, followed the advice of others and added some chicken broth. Served with brown rice and sauted cabbage. Next time will probably add a bit of Tabaco as well.

Pizza Casserole

This was pretty good as is. Will definitely make again, but like others, will probably add olives and other veggies. Great with salad and wine. This will be a good one to have on hand for when my nieces & nephews come over (without the wine).

Broccoli Beef II

This is a very quick and easy recipe, and defintely tasty! I "accidentally" made way too much pasta, but it was still really good. Loved that most of the ingredients are fairly basic pantry staples, so there wasn't a lot of running around town looking for special items. This one's definitely a keeper!

This wasn't bad. Not my favorite, but an ok way to use up some leftover ingredients. If I make it again, I'll probably change it up some and marinate longer than an hour.

Penne Pasta with Spinach and Bacon

Made recipe once as written, then again with some minor changes. (star rating is "as written). This will become a go to recipe in my home. As written it's a really good recipe, nearly as easy to make as regular spaghetti. The changes I made were to add sliced mushrooms (sauteed after cooking the bacon) and red pepper flakes (added after adding the tomatos). This is really good with whole wheat pasta as well.

Chipotle Sweet Potatoes

Lemon and Thyme Lamb Chops

Made for Easter dinner. It was great and super easy! Marinated for about 6 hours before putting on the grill. Had to use dried thyme since I won't have fresh until the garden is planted. Per the family's request this is staying on the Easter menu for at least a few more years.

Homemade Black Bean Veggie Burgers

Great flavor on these. Pan fried these, had to be careful with them so they wouldn't fall apart. Will probably take the suggestion to freeze next time. Will also saute onions & peppers before mixing in.

This was awesome! Great flavor, and I love that most of the ingredients are things I keep on hand anyway. Probably next time I make, I'll add some black beans, but it's tastey without them. Definitely a keeper!
