I love to entertain and am more comfortable cooking for an army than just me. (Cooking for myself usually involves something out of a box).
My favorite things to cook
Anything Italian, Mexican, or heavy in the carbs. Am starting to experiment in more healthy/vegetarian meals to save money & calories.
My favorite family cooking traditions
Christmas Lasagna- one of the few recipes I refuse to give out. Also the monthly tea parties. It's always fun to see how the gals take the theme and run with it!
My cooking triumphs
Teaching my vegetarian friend how to cook even though I'm not vegetarian. Also, baking truly homemade, from scratch cakes. Not much more involved than opening a boxed mix, and so worth the effort.
My cooking tragedies
Making homemade spaghetti sauce with my mother. TBSP does NOT equal TSP!!! >_

Ginger Glazed Mahi Mahi
Followed the recipe exactly and it was wonderful. One thing I'll probably do next time is marinate in a freezer bag to save on dishes, but don't have to change the recipe itself. Served with couscous and green beans. A great meal for a busy weeknight!

Sugar Cookie Icing
This icing was exactly what I was looking for to decorate cookies for a wedding shower. Worked perfectly. I did have to thin it out with a little more milk than called for, but that wasn't an issue.

Thai Orange Chicken
I made this last night for dinner. Flavor was really good, only needs some minor tweaks. I used low sodium soy sauce to avoid the "too salty" problem. I think for my tastes (and my friend's) will have to add more chili flakes. The heat was there, but just barely. Also, mixed in some steamed peas and that was pretty good. Will try with either broccoli or green beans next time. Also, there wasn't a lot of orange flavor in the sauce, so next time will follow others' advise and add some orange zest. All in all though, a really good dish. Definitely a keeper.
