Banana Sour Cream Bread

I loved this recipe. I did cut it back a bit. I made muffins instead of loaves. I used 2 cups of sugar, 1/2 stick of butter, 1 stick of Parkay, 1 tsp vanilla, 1/2 tsp cinnamon, 1/2 tsp of pumpkin pie spice, 2 cups flour, 1/4 tsp of salt, 2 tsp baking soda, 1 cup light sour cream, 4 bananas, 2 eggs, and I added in a package of Martha White Banana Nut packaged mix. No walnuts or sprinkling of the sugar and cinnamon in the baking pan. I just used baking spray. I almost cooked them a bit too long at 350, so make sure you watch the oven. They are moist and delicious!

Avocado, Tomato and Mango Salsa

To make more, I added another mango, 1 large fresh tomato and 1 can of diced tomatoes with chilis, and another can of diced tomatoes (Fennel and Red Pepper), 4 garlic cloves, 1 TBSP EVOO, 2 TBSP White Wine Vinegar, another jalapeno, cup of cilantro, 1 1/2 TBSP sugar, 2 sweet onions, the juice of 1 lime. I let it sit overnight and serve it over baked salmon, or even store bought rotisserie chicken with tortilla chips and rice! Yummo. Thanks for the recipe.

Avocado-Mango Salsa

To make more, I added another mango, 1 large fresh tomato and 1 can of diced tomatoes with chilis, and another can of diced tomatoes (Fennel and Red Pepper), 4 garlic cloves, cup of cilantro, a little more sugar, and another onion, the juice of 1 lime. I let it sit overnight and serve it over baked salmon, or even store bought rotisserie chicken with tortilla chips and rice! Yummo. Thanks for the recipe.

Slow Cooker Baked Potatoes

Delicious! For times sake I usually make my potatoes in the microwave. But I will use the slow cooker from now on. I sprayed my potatoes with Olive Oil baking spray after washing. I forgot to poke holes in them, but I will try that next time. I did sprinkle sea salt all over, and then wrapped them in aluminum foil. Baked 4 large potatoes for 8 hours on low, and they were great.

Sweet Restaurant Slaw

Added 1/2 teaspoon of salt, and used fresh cabbage only! I followed everything the same, except I added celery seed instead of poppy seed, no carrots, etc and some fresh ground pepper. So delicious and sweet.
