Jalapeno Poppers I

Made these tonight with the organic jalapeños that came in my weekly CSA box. Holy cow, they were delicious. I followed some recommendations from the reviews and tailored to my family's taste. My picky hubby said these were the best jalapeño poppers he ever had. Wow! Here's what I did. (I only mad a half batch). I seeded and blanched the jalepenos for 2 minutes. I mixed the cream cheese and cheddar with 2 dollaps of cholula (hot sauce). (I omitted the mayo, as we don't like that.). I dredged the stuffed jalapeños in flour seasoned with chili powder and cayenne pepper before dipping in egg and bread crumbs. Then I baked as recommended at 359 for 30 minutes. Delish. A+!

Apple Oatmeal Crisp

Here's how to turn this 4.5 star recipe into a full 5 stars: do not melt the butter. Soften a stick of butter and cream it into the oats, flour and brown sugar, adding a generous teaspoon of cinnamon. Peel and slice the apples about 1/4-1/3 inch thick. (Apples should be tart or mildly tart, and fresh.). Mix them with a scant 1/2 cup of sugar and another heaping teaspoon of cinnamon. Layer 1/2 the crumb mixture into a prepared 8" square dish. Push the apples into the crumb mixture, and top with the remaining crumb mixture. Bake 38-45 minutes at 350. Do not overbake! Voila! The perfect apple crisp.

Easy Pesto

Toasted the almonds over a gas stove burner In a heavy, dry pan. Almost skipped the nutmeg but it added a nice flavor level. Doubled the recipe and used the blender. Yum. Even the kids ate it.

Delicious Ham and Potato Soup

Deserves the 5 stars. Used 1tsp onion powder and skipped the celery since I didn't have any on hand, and it was still delicious. Even my picky husband raved about it. Have made this several times now, and here's what I suggest. Sauté the onion and celery (if you have it) with the ham for a few minutes before adding about 3cups of chicken broth. Boil the potatoes til fork tender while preparing the bechemel sauce. Make sure it has really thickened before combining! Yum.

Peanut-Ginger Chickpea Curry

Yum! Even my picky husband liked this. I only had one can of chickpeas, so added some carrot chunks that I had lightly steamed. I also followed other reviewers' suggestions and added a teaspoon of red curry powder. Served with brown rice. Will definitely make this again.

Yum. Substituted white whole wheat flour. I didn't have anise extract or oil, so I used vanilla instead. Next time I'll add a little almond extract too. I chopped up semi-sweet chocolate chips and walnuts and stirred them right into the heavy dough (took a little elbow grease). (BTW: No extra flour required!) Used wax paper and a rolling pin to form two equal logs, which I then dumped onto a parchment-lined baking sheet. Practically no clean up! Baked about 24 minutes, waited a couple minutes, sliced with a pizza cutter, and toasted another 6-8 minutes. Next time I'll slice with a pizza cutter just after they come out of the oven (or maybe a minute later). These are delicious, with a crumbly texture and the perfect bite -- not jaw breakingly crunchy. I will definitely make these again. Thanks for sharing this awesome recipe!

Slow-Cooker Chicken Tortilla Soup

Awesome. So simple, I was skeptical. But, trusting the reviews, I made it for a party and it was a huge success. A half dozen people must have asked me for the recipe. I used low sodium chicken stock instead of water and dumped the raw chicken breasts in with the ingredients and let them cook in the soup. And I served with store-bought chips. A+++.

Decadent Pumpkin Muffins

These are delicious. I followed the recommendations of theobromine goddess plus made a few slight tweaks of my own: Use 4 whole eggs, Skip the water, Skip the allspice, Skip the raisins (my kids won't eat them in muffins), Use a generous 1/2 c applesauce, Use plain nonfat Fage yogurt. Next time I will adjust the cloves down and cinnamon up. Incredible. Add a generous tsp vanilla

Chicken Nuggets

These are so, so good. I've made them a few times. All my picky eaters eat them happily. I always skip the thyme, as I think it would turn off my kids. Sometimes I cut the chicken into tiny, popper-sized pieces, which my kids think is fun. I've used much less butter than called for and they still come out wonderfully. I've found that my family prefers them very crispy, so I crank up the oven heat for the last five minutes, which really crisps them up. Next time I'll try the other reviewer's suggestion and dip them in skim milk instead of butter, which would seriously cut the calories. Thanks for this simple, delicious recipe.

Oven Fried Parmesan Chicken

Wow. I used chicken legs (because my kids think they are fun) with the skin pulled off (because I try to eat healthy). I used less than 1/2 the suggested amount of butter and 3 cloves of garlic (because, in my opinion, there's no such thing as too much garlic). I brushed the garlic butter on and then rolled liberally in the cheesy crumbs. (I had to skip the parsley because I didn't have any, and I used whole wheat homemade bread crumbs.) Fabulous. The house smelled amazing while they cooked, and my picky family devoured them as soon as I put them on the table. I will be making these again. Soon. Thank you for the phenomenal recipe!

Roasted Brussels Sprouts

Holy cow. I was skeptical, as the recipe seemed too easy. But, hey, don't mess with a good thing! These are outstanding. My Brussels sprouts were huge, so I halved them. I cooked them at 400 for about 15 minutes, then another 10 minutes at 375. Delish. Yum. Now I just need to get more Brussels sprouts...

Fluffy Pancakes

Best pancake recipe out there. I always substitute white whole wheat flour. In a pinch I've used vegetable oil in place of the butter, and I've even subbed apple sauce when I've wanted to eat healthier. Still yummy.
