Seared Sea Scallops

This is a very simple and delicous recipie in which to prepare Sea Scallops. Be careful with the lemon pepper however as it is overpowering if you use the reccomended amount in the recipie. I reduced the amount by more than half and was very pleased with the results. Serve with a pasta dish...YUM!

Vegetarian Stuffing

I made this recipie for Thanksgiving yesterday and had mixed reviews from young and old alike. Me personally, I enjoyed the change from traditional stuffing I've been accustomed to, although I was not happy with the stuffings overall appearance upon serving from the oven. I used all of the extra ingeredients but only used half the amount of vegetable broth the recipie called for. I couldn't imagine how soupy this mixture would have been with the additional broth. ***Note: the stuffing really tasted and looked better the next day after reheating the refrigerated leftovers. Maybe next time I will make stuffing a day in advance and sub chicken broth for vegetable broth.

Deep-Fried Turkey

I have deep fried about a dozen turkeys so far for maybe 25 or 30 different people and have never had a bad review. Young and old alike enjoy this succulently prepared bird. This makes turkey a meal to prepare more than once or twice a year. Stick to peanut oil for deep frying needs. Higher smoke point and it also really seems to accent the birds taste. A+ Excellent!

Smothered Filet Mignon

This was a great twist to an old favorite. Turns out the Dijon works just fine, but I will try the course dijon next time and compare. Used splenda to carmelize my onions rather than sugar and could tell no difference. May wrap the outside of the filets in bacon next time as well...BAM!!!

Grandma's Green Bean Casserole

This was a super easy green bean recipie that was easy to prepare and a big hit with everyone! I sauteed some small sliced portobellos and added them and minced garlic to the mix as well. Excellent addition!

Mexican Cornbread II

This was pretty good although I added fresh jalapenos and I think next time I make it I may mashh a can of regular corn rather than add the creamed corn. Tastes good but recipe tends to come out a little more like bread pudding??? I also added a little extra corn meal to try and stiffen mixture up.

Asian Turkey Barbecue on Sesame Scallion Toasts

Baked Sweet Potatoes with Raisins and Pecans

Awesome. I cut sweet potato's into long spears instead of cubing. Also added sliced apples on top. A crowd pleaser. Buy small long and slender sweet potato's.

Pork, Cashew, and Green Bean Stir-Fry

This was a delicous stir fry. I read the previous reviews and did make some additions though. Added half of a juliened red pepper, a half can of water chestnuts, half can of bamboo shoots and a bit of crushed red pepper towards the end of simmering. I believe toasting the cashews makes a big difference and is a cinch with a piece of foil and a toaster oven. Good stuff, and good for you.

Spiced Pumpkin Seeds

For the optimal experience when cooking pumpkin seeds you must dry cleaned seeds overnight. Doing so on torn open brown paper bags is reccomended. Only then will you achieve a perfect crisp and crunchy seed. This recipe is perfect. I don't know how anyone could find any fault in it unless you just don't like pumpkin seeds.

The Best Meatballs

These were very good. I bought a 1# meatloaf pack of meat (beef, veal and lamb) and halved the recipe. Baked for 30 minutes at 350. Mangia!

Baked Asparagus with Balsamic Butter Sauce

I ususally make a variation of this on the grill and this is just as good. Add rosemary,garlic or other earthy spices to your liking. Bake asparagus for about nine miutes rather than thirteen for bright green and crunchy spears.

Fish Fillets Italiano

Great recipe but I changed it up a bit it due to what ingredients I had available. I basically subbed a can of Rotel tomatoes w/ jalapenos and used a can of minced black olives rather than sliced. Turned out to be a zesty fish dish with a mexican flair. May resubmit it as "Fish Filets Mexacali"! Very good...lot's of sauce though...could probally cook more than a pound of filets.

Sour Cream Refrigerator Mashed Potatoes

A nice simple recipe. Turned out well and did not last long after second helpings. I prepared it and refrigerated in the casserole dish the night before. Popped in oven for about 45 - 50 minutes before dinner...voila. Easy, easy, easy.

Roasted Garlic Mashed Potatoes

This was very good and easy to make. A true comfort food. Would be great with a meatloaf covered with a tomato sauce. I served mine with stuffed green peppers. Roasting the garlic was a nice touch and filled the kitchen with a nice aroma, although I agree with the other reviewers that I would increase the amount of garlic next time as I felt it didn't come out strong enough as the recipe was written. A little sprinkle of paprika on top about 10 minutes before the dish comes adds a nice flair.
