Potato Leek Soup III

I only use 1 stick of butter, and add soft-cooked bacon to the soup while it is cooking. This is a great recipe to use as a base and alter for your own needs. Drop the corn starch and use a wand blender to mash some of the potatoes for a heartier chowder.

Chicken Marsala Florentine

I changed it slightly: 8 boneless & skinless chicken thighs 1/2 cup flour salt and pepper 1 tablespoon oregano 2 tablespoons olive oil 2 cloves garlic, minced 1/2 cup butter 2 cups sliced mushrooms 1/2 cup sun-dried tomatoes 1 cup fresh spinach 3/4 cup Marsala wine

Cheddar Onion Drop Biscuits

I suggest using fresh green onions sliced very thin instead of the dried onions. Otherwise a very good recipe.

Easy OREO Truffles

I've been making this recipe for years now, though no one quite knows what it is. You can also press the mixture into a square plastic-wrap lined pan and let it set over night in the fridge before cutting into squares or rectangles. I like squares, dip them in dark chocolate spiced with a hint of peppermint flavor. Then using a decorator's piping bag you can make white chocolate ribbons on each piece for a fancy designer look.

Stuffed Peppers

Easy recipe. I substituted Italian Pork Sausage for the ground beef, drain the grease off after cooking. I also used fresh Vidalia onion, fresh garlic and brown rice. I make my own tomato sauce with home grown toms, but I did use 16 oz. I omitted the Worcestershire sauce and cooked the brown rice in beef broth instead of water- Makes a world of difference. Great base recipe to tweak with your own touch.

Salsa Chicken

I make this with a single change. I mix the Taco Seasoning with greek yogurt and marinate the chicken in that for an hour before cooking. I also dress up the sour cream with a bit of lime juice and a spoon of taco seasoning.
