Avocado, Tomato and Mango Salsa

I made this for a family get-together. Everyone LOVED it! I used 1/4 cup of cilantro, and lemon instead of lime juice (lime would probably have been better, but I didn't have any on hand).

Blackened Tilapia with Secret Hobo Spices

Delicious! I didn't use all of the oil the recipe called for, so we didn't have any drippings. Served with veggies and plain rice (the plain rice was nice because of the strong flavors of the spices). Thanks for the recipe! Love it!

Pesto Pasta with Chicken

We LOVE this dish! We did not have sun dried tomatoes so wee used regular fresh tomatoes instead, and added artichoke and fresh chopped spinach. It's a great way to sneak in a bunch of veggies without noticing them! Thanks for the recipe!

Maria's Stuffed Chicken Breasts

I use a super thin knife so I only create about an inch slice in the chicken, and can slice out the middle so we can actually stuff the chicken breasts. It is cool to seem them double in size from the stuffing! This is a favorite at our house - though a bit labor intensive. I use ricotta cheese instead of cottage cheese.

Mediterranean Wrap

I followed the directions the first time I made it, and the veggies ended up being mushy (peppers were still kind of crunchy). The second time, I cooked the peppers for 2 minutes, added the onion and cooked another 2 minutes, then added the eggplant and mushrooms for 5-7 minutes. Textures were perfect! I also added chicken which I had marinaded in balsamic vinegar with a little salt, pepper and garlic powder. We used Feta cheese instead of goat cheese - it was a hit!

Spinach Pesto Chicken Breasts

This is a good base recipe. I followed other reviewers suggestions. I added the following: 4T of pesto (instead of 2), 1 t minced garlic & 1 t white wine to the pesto mix. I layered in with the chicken: 1/2 a chopped onion, 1/2 a roasted pepper (chopped), mushrooms. Amazing!!!! Don't forget to sprinkle the chicken breasts with some salt and pepper. Next time I'm thinking I'll add some grilled asparagus (anything to get more veggies in our diet!) Thanks for the excellent starting point!

I thought this would be weird. However, it was quite delicious! A little spicy for me, so next time I will cut back a bit. Dont let the random ingredients frighten you (I never thought curry, cajun and spaghetti sauce would go together!)

Mexican Casserole

Instead of using rice and salsa, I like to make spanish rice for my casseroles. Also, good to add avocado and salsa after baking.
