Authentic Paella

I bought a paella pan in Spain and was a little skeptical about how well homemade paella would turn out. I was amazed at how fast and easy this was. For the protein, I used shrimp, tilapia chunks and canned clams. Other than the rice to liquid ratio, I just eyeballed measurements. The dish can easily be adapted based on what you have on hand and what you like. I didn't have saffron so just used a bit of turmeric for color. I don't give many 5 star recipes but this one totally earned it.

Ginger-Peach Jam

Very good and different. I like ginger but I might try decreasing the amount next time to give it just a little extra zing without being super gingery.

Butternut Squash Soup with a Kick

Really good. I used fat free evap milk and lite coconut milk and it was still plenty rich. I didn't bother with the sour cream. I'll keep this recipe as my go-to butternut squash soup recipe. Yum

Slow Cooker Mole-Style Pulled Pork

The recipe as is is woefully underseasoned. I added TONS of extra cumin. One guest really liked it and I sent the leftovers home with her b/c I found it to be fairly gross. I wouldn't say it was a big hit with the rest of the guests.

Slow Cooker Buffalo Chicken Sandwiches

Couldn't be much easier. My guests liked it. I'm not huge into buffalo flavor. It wasn't anything special, per se, but definitely buffalo chicken.

Slow Cooker Stuffing

SO good. Just as good as in-turkey stuffing and it worked well since we cooked our turkey "deconstructed" (ie not whole) due to limited oven space and speedier cooking. Next time I'll add stuff like nuts and cranberries. I used store bought bagged stuffing cubes and the amt of broth called for was just about right. It'll be on the menu next year for sure.

Avocado, Tomato and Mango Salsa

Be sure to use a mango and avocado that are just slightly underripe or you'll have a squishy mess. Made as directed, it is quite a mild salsa. If you want heat you'll have to improvise. Don't add the olive oil. I don't see the point and it makes for slimy, oily leftovers.

Rhubarb Dream Bars

Delicious! It's very rich and I gave it 4 stars rather than 5 only because it's a bit too sweet for me (and I love sweet). I might make it again and cut back on some of the sugar in the rhubarb part.
