Summer Bean Salad II

This is delicious! I used garbanzo beans instead and also added in a bit of crushed red pepper, garlic powder (want to try minced garlic next time) and some goat cheese. It was so yummy!

Buttermilk and Chive Salad Dressing

This is a great recipe, but I actually used it as a base. I had some fresh parsley and oregano that I also put in with the chives. I also added some dill, onion powder and garlic powder that I had. My husband likes spicy foods so I also added some crushed red pepper flakes and some Sriracha sauce (or Rooster Sauce as I've heard a few people call it). This added a bit of heat and flavor as well.

Kalamata Olive, Tomato, and Cheese Melt

This is delicious! My husband and I loved it. Only thing I did differently was that I used goat cheese and I mixed it with the pasta with the sauce. So good!

Grilled Portobello with Basil Mayonnaise Sandwich

Fantastic! I don't have a grill so I sauteed the mushrooms. It's a bit more messy but gets the job done. I also put this on homemade bread that I made in my bread machine and it was even better than the first time I made this recipe. Delish!

Slow Cooker Vegetable Chili

I love this recipe! I tweak it a little each time I make it so that I can use up whatever is in my cupboards. I usually put in a can of tomato sauce as well so that it adds a bit of thickness. Yummy!

Almost No Fat Banana Bread

Pumpkin Butter IV

This is absolutely delicious. I took the advice of the reviewers and cut the sugar down to about 3 cups white sugar and 1 cup brown sugar. I also added in half a can more of pumpkin and about 1/4 cup of homemade applesauce. It is so tasty!

Goof Proof Coconut Curry Chicken

The only reason this isn't getting 5 stars is because I made a few changes. I used a whole can of coconut milk and only used water to mix with the cornstarch. I didn't have curry sauce so I used about 3 tbls. of curry powder. I also used about 2 tbls. of red chili paste. I also threw in some minced garlic and ginger, along with some cilantro and about 1 tbls. of brown sugar. It was delicious!!

Hot Pepper Jelly

I followed some of the suggestions given here and used 4 tablespoons of pectin instead of 3 1/2. It still came out slightly runny. I opened one and put it in the fridge and it firmed up quite nice. I'm going to try it with the other jars.
